i studied under a Callebaut master chocolatier when i was taking my pastry chef course. it was phenomenal the art and detail that was taught. it forever made me meticulous with regard to mise en place, patience and finesse when it came to creating. this was a joy to watch - thanks Bon Appetit

I was thinking of going to some of their courses, but i think it's a shame that they only show a couple of recipies. And it's a bit expensive in my country. I think maybe online courses are better. Not sure.

My mom and I used to make truffles all the time. coconut, cocoa powder, and nuts were popular. But we never dipped in chocolate first. Sometimes she would put in mint extract. Mint with the cocoa powder was awesome, big favorite.

Awesome video! It is one of the rare videos that covers the process end to end on a really high level. It's only missing the actual proportions but excellent otherwise. I've been making chocolate for a few years now and can tell his technique and understanding is spot on. Have to try the nougat next!

Glucose is mit corn syrup. Glucose is split up sugar. And corn syrup is/can be glucose (in America high fructose corn syrup also exists I think). Normal sugar is glucose-fructose bonded together. So it’s just a part of normal sugar.

very interesting to see the tempering technique of using the marble slab and the ?spackle knife? on a portion of the heated chocolate and then reintroducing to the remainder chocolate to cool everything down to the right temperature -

I like that you said "also known as corn syrup". I have seen people freaking out over corn syrup in baking videos because of high frutose corn syrup. They lose their mind and it's not the same thing nor is HFCS totally evil. Maybe calling it glucose will make them feel better. lol
