Don’t apologize for spending more than you allowed in your budget. You are providing food for 2 houses, and that’s a challenge for sure. It would be easier to stay within budget if you were at one house, but that’s LIFE. Good job.

I just saw the forecast for this weekend. Hopefully everyone will be in their respective houses and safe, sound, and warm. I just got home from the grocery store. I had made a Walmart order and ordered gallon distilled water, but they were out. So I went to my local store to buy water, came home with their grain bakery bread called ‘MN Nice.’ It is fresh today, but I came home without the water that I went to get! What you spent for groceries is still really good! Thank goodness for your hard work you did to can all those things for the pantry.

So this week we have Saturday steak for hubby, mac & cheese for me &meg, Sunday is a dish called ham & beans so ham and different beans, Monday is chicken Kiev, Tuesday lasagne, Wednesday roast beef and Thursday we’re having sweet &sour meatballs. I set my budget $25 a week for dairy only. (also using up powdered milk where i can) we have a freezer full of meats abd veggies s d about 800 quarts of canned food. 5 family members in the house and 4 older kids who come to visit lots and 2 grandparents too. so far on budget… getting creative.. chili, potatoes and ham, potato soup with leftovers , grilled chicken with leftovers made into rice casserole , crockpot beef abd then leftovers into stroganoff… lots of muffins and homemade bread (so far haven’t bought store bread). it’s actually a lot more thought put into it than one might think! i am in it with you and INSPIRED by you. i think our pantry challenge will last at least through march. You can use plain yogurt for sour cream. I also use plain or Vanilla yogurt in banana bread

Our newest dish is cowboy caserola. Ground beef, tomato sauce, chili seasoning, black beans. Cook on stovetop until ground beef is done. Add the tomaro sauce, black beans, chili and garlic powder. Topped with cheddar cheese and either biscuits or potates on top. Cook for 30 minutes or until biscuits are done. My nephews will eat as many servings as I allow them to.

Chicken cordon blu casserole, it turned out yummy, and homemade chicken stir fry with brown rice cooked in broth, and lots of veggies, you just keep doing what you need to for your family, never feel like any apologies are needed.💜

I am a widow so cook for one, but next weeks menu is oyster stew, baked pork chops and rice, oatmeal/toast/, chipped beef gravy over bread, will finish up pickles, peppers etc from the icebox. I have only purchased milk and eggs so far in January. Love your videos!

A banana portoin is 3" long by 1.5" in diameter. Not much and the carbs in a grocery store ripe banana turn into a LOT of sugar.

I'm diabetic for over 30 years. Serving for a banana-extremely healthy choice-is half a medium banana and counts as 15 carbs or ONE CHOICE. Half a banana is a decent snack-especially if combined with no-sugar peanut butter. Hope it helps.

Have you looked into making your own wipes? Thrift store flannel sheets torn into the desired size work pretty well; 'ya want to buy at the lowest clearance price 'cause color amd print are less important.

We used to love grapefruit when we were young! We did eat it with sugar and special little spoons! I mostly remember eating it at my grandma’s house! I know we did at home too! I just never think of it!

Don't apologize for overspending. You're buying for two houses. Plus you're looking out for Sweetpea too! Unfortunately, I can't make budget meals due to everyone has so many things they don't like. If it was just me I could make casseroles,soups etc and freeze them. I'm not picky,I love all kinds of food ! But my grandchildren and son-in-law are very picky. So I do what I can. By the way my father's favorite civil war site is Gettysburg in PA. He loves President Lincoln besides Washington and Jefferson. Thank you for the video. Can't wait to see the next one. 🙏🙏🙏❤❤❤

Chicken Terayaki stir fry with mushrooms, gree onion and carrots over brown rice for those who want it, tomato bisque soup and garlic toast, bbq chicken sandwiches and air fryer fries, smoked sausage and shredded potatoes and Lima beans on side, pork chops loaded potatoes and green peas, chicken enchilada casserole and black beans, and breakfast for dinner waffles and sausage. I’m not doing so well because I forgot some things when I shopped so,I’ve had to buy some things but trying hard to buy as little as possible.

$100 per house sounds more reasonable under the circumstances. You are still cutting cots and using your food storage. My son in law cooks for me (us, a family of 5) today he made navy beans with a leftover ham bone, cornbread and cucumber salad with tomato and onions. Yummy last week we had chili, I've never tried it over sweet potato, sounds interesting. ❤

Oh my goodness! Don't feel bad, I am doing the pantry challenge, and it kind of got thrown off this week, I spent too much at Safeway, but it was because there were a few extra things(like toilet paper😂) that I needed, so it kind of was bad this week, oops! To top it off, my husband wants to randomly go to Costo. I think I don't need but two things, and we have a 44 dollar coupon, so it will be a smaller purchase, but maybe not, because it's hard to go up there and then we impulse buy🤣. All in all, I did pretty decently for the first couple weeks, but I need to try harder. It is nice to work through my pantry and use some of it up faster. I've spent lots less this month than I normally would on a normal month, so it worked out. Ugh! its hard sometimes. 😅

I’m new here. I saw one of your old videos about Sweet Pea having type 1 diabetes. My granddaughter was diagnosed with that about 7 years ago when she was 10. At first they had to do the finger pricking and the needles. But after about six months she got an insulin pump that she wears 24/7. It is very small. Then she also has a glucose monitor that alerts us to exactly what her blood sugar is 24/7. She wears that too 24/7. Then we had another gadget that we’d type the carbs she was going to eat and it figured out how much insulin she would need and that would tell the pump how much to give her. Now she wears a glucose monitor that talks to her insulin pump and tells it how much insulin she needs. Amazing to me. You may already have all these things for sweet pea but if you don’t please look into it. No more needles no more finger pricking. These gadgets have to be changed every few days and that is not too much fun. But definitely still worth it. Good luck with all your challenges.

There is only 2 of us and I do $50 a week for our budget . For greens and dairy. I can alot of soup so we have soup twice a week, fish once a week, Salad with Grilled Chicked or Steak twice a week . We have left overs for lunch , or protien shakes. They are days we just eat slice cheese and grapes for a meal. SO far I am on track this month and thinking It may be a couple weeks until I need to go back. We spent 7 months in the Nicu with my grandson in another State than we lived in. Luck we had family. In that state. Happy to say tomorrow he celebrates the 1st yr birthday of his son🎉

I challenged myself to spend $300 for two weeks to save money. It saved us $200 of our regular budget. This week we are having an appetizer party day on Inauguration Day so that day is special and we will feast that day. Otherwise trying to do yogurt and granola most breakfast for health and frugality . Also making less desserts

Pulled pork fried potatoes. Turkey chilli Shepards pie. To use up pulled pork i have flatbreads I was also thinking mac n.cheese homemade of course. I always have primary staples. I was brought up if you have the basics you can use your staples to make a good meal. My husband and I have had to use food shelves this month as we are both on a lay off. He does construction and I work at a college in the kitchen. I'm going to have to make some budget changes as we are at the top of the list for housing. The last 3 and half years we have been in a motel. I've been helping take care of a friend of mine a few nights a week on those nights were there or at a few different friends houses or our car. We are hopeful we will have housing in 2025 as the last few years i had to come in and refill out applications for housing. This time was different they had me bring in paystubs.
