Apologies for coming late to this party. Fascinating video. I make wines from fruits and vegetables as a home wine maker. Here are a couple of thoughts: 1. If you dissolve 1 lb of table sugar in water to make 1 US gallon of liquid, the specific gravity of that sugar water will be about 1.045 and at that density that solution will have a potential to ferment to make a “wine” of about 6% alcohol by volume (ABV). 2. Mulberries likely have about 1 lb of sugar dissolved in 1 US gallon of their own juice. So, if your mother’s wine produced 1 US gallon and she had added 1 lb of sugar, the potential ABV would be around 12% (a typical table wine). My guess is that the amount of wine produced was far less and the amount of sugar your mother added was also far less than a pound (Could be very wrong but that is what the video appeared to suggest). I am thinking the wine was more likely 9% ABV. And if it was sweet tasting, then not all the fermentable sugars were fermented (indigenous yeast are not nearly as robust and viable as lab cultured yeast so they are far more likely to quit fermenting (alcohol is toxic to yeast) with lots of sugar left unfermented, so the total alcohol may be closer to 7or 8%. If the wine is very sweet, then the alcohol level would be even less. 3. I regularly make mulberry wine and mine are at 12 % . One delightful variation is to add cocoa or chocolate to the wine. You can do that by adding cocoa nibs or as I did, by adding 4 oz of malted barley (for every gallon of wine) roasted very dark and used in brewing beer to make chocolate flavored beers. You need to boil the grains in water but those grains are so roasted that they have no sugars that can be fermented. They add only flavor.

They should as they are hardy trees! They are deciduous trees so don't be alarmed if leaves fall in autumn.

@@wendiland I did choose 2 different kinds. One hardy, made for Swedish conditions, Calles MULLE and one little less hard but should do fine. I did Dell in love with mullberries when I was working in NYC. The weather there is similar to Sweden but warmer. Lot's of love from Sweden!

I grew up with mulberry trees and would ruin tons of shirts by using them as make shift baskets & stain them with juice, I would skip lunch to stay outside and fill up on mulberries I would always wonder how my parents knew I had been eating them and never realized it was because of my clothes . Thinking back it reminds me of how we would give gallons of mulberries to friends and family and they would make all kinds of things with them cobbler, ice cream, drinks, alcohol( my dad’s best friend would make moon shine with peaches and mulberries)jams & jelly, muffins, cakes you name it. The funny thing is that my parents never made anything with them we always ate fresh and let people come and pick them to take home we did the same with blackberries . We tried to gather enough to make something but didn’t have the will power to resist eating all of them before we made it back to he house.

I have never seen mulberries that big or plentiful. So jealous! Never look closely at the mulberries because they are infested with worms. Just pop in your mouth and chew. LOL! I've fermented a lot of stuff and always thought it needs air for fermentation to work (but also so it doesn't explode), so that's interesting to see you guys don't do that. I'm also surprised that much sugar was used since the berries have some sweetness to them. But I'm more of a kombucha, kefir, yogurt, etc., type of fermentor. :)

@Cosmos Poppies Raw leaves don't taste like much to me, very mild. Drying the leaves for tea makes a difference. Flavor really comes out in tea using dried leaves.

My neighbors have a yard full of blackberries they don't maintain so the vines have been growing over to our side of the fence. My sis made blackberry wine last year but this year I took the unripe red and green berries in hopes of making a tart wine because I like sour things 😅

Hi Wendi, I just bottling my mulberry wine too(made last year too, and it smell so amazing). I'm just curious about the contents about "methyl alcohol". Did you check it or not? If so, how? My mom made a 10 year old mulberry wine and stunning me, so I started making my own one. The elder can told you the recipe and how to do it(exactly like your method, and the product looks quite same to me), but they have no idea about the food safety problem, and it worry me.

I have about 6 gallon of mulberry in my refrigerator that I'm trying to figure out what to make with them. I was thinking about making some wine. I'm not a drinker either, but I still think it would be interesting to make my own. What is the ratio of sugar to berries? Thanks

It would be so cool! Get going on them soon since mulberries will go bad fast. Mulberry natural have yeast so it will ferment or turn to alcohol eventually even without the sugar. Although sugar does feed the yeast, we mostly add the amount that is more for taste preference. There’s no measurement so to guess I’d say about 60-70% fruit, 30-40% sugar. You can also add more sugar later. Have fun!

Put a clean sheet on the ground and give the tree a good shake. Your sheetwill end up stained, though.

There’s no exact measurement for sugar. Casually layer them between the berries. Add more sugar if you like the wine sweeter. My mom doesn’t have experience working with frozen, but if they were fresh raw it might still work. You would be able to pack more in if the berries thawed first. Good luck! 👍

The more sugar you add the higher the alcohol content will become if you let it completely finish fermentation. If you want it to be sweet you will have to halt the fermentation process by either placing it in refrigeration to put the yeast to sleep or use sulfites to kill the yeast when the flavor is where you want it. Otherwise the yeast will consume all of the sugar and turn it into alcohol.

I recommend using bottles or jars with larger mouth. Fermentation process may cause it to bubble over. When wine is ready to drink, can strain it to transfer to any bottles you like.

berries naturally have yeast. We made plum wine same way without yeast. i don’t know how other homes make it. Some people do add yeast.

I live in Beaverton Oregon and I am growing a mulberry tree. I bought mine in the store in Portland. One green world. It was a bareroot, 4 ft tall. And grew really fast. Now my tree is 4 years old. And I am being pruning heavily because it grows so fast and big. I get lots of fruit every year. I also make tea with the leaves.

It depends, but for us usually about 3-6 months you can smell some alcohol. The longer you leave it the stronger it gets. We have some that's a few years old.

I rarely find grubs and i have been picking organic mulberries for ten years now. I do let my chickens free range and they clean the fallen fruit quickly so maybe that helps.
