Everybody has different tastes and preferences, but I do think the first dish was scored too low just because of size and spice level. It didn’t seem like it was extremely hot, especially with the way Dion was eating it. The second dish was clearly sweet with (I’m guessing) little pepper. It was unconventional for the other two guys, but they still scored fairly because it was good. I do wish there was a 4th judge or you should invite them all back for another competition. Similar to how the Bahamian moms cooked the whole thanksgiving dinner.😂

The other contestant ate 2 dishes and didn’t like the spice level even though it’s supposed to be spicy. He also complained about the size which has nothing to do with how it tastes. That is what I saw. That’s an observation, not a comparison. About 65 people seem to agree. 🤷🏽‍♀️

He sells days before, weeks, and months old food to the consumers in the neighborhood. Shiit is sad. That one was close. These guys know how to cook oxtails! I've found that the key is to coat the oxtails in seasoned flour and brown them before putting them in the slow cooker and cooking low and slow.

Nah not Jamaican oxtails - no flour required. We didn’t have the best representation cos oxtail is to cook on the fire low and slow not the oven

No. Never coat them with flour. Season them, leave them to marinate for an hour or more, then sear them on each sides before putting them with the fresh seasonings (onions, garlic etc) with water in a pressure cooker for 45minutes to an hour. Then it on the stove, lid off on low heat until it simmers down to gravy. The Jamaican way.

They simmer for 3 hours I made some with my bm, on March. Season it up really nice cut ur veggie add everything like onions bell peppers ,garlic, let simmer 1 hour or 2. The. Add ur potatoes and carrots butter beans let it go another hour then, done
