i couldn’t find a recipe similar to the “fajita” soup from the cookbook so here are some tortilla soups lol www.thesprucee...
minimalistbake...
or for a vague interpretation:
sautee olive oil, onion, garlic
add bell peppers, zucchini, mushrooms, other veggies you want & cook for a few minutes adding lots of cumin, chili powder, salt, pepper, & cayenne
then add a can of diced tomatoes & black beans
then add lots of broth/water & bouillon & continue to season to taste
then add lots of lime & serve with cilantro, avocado, & tortilla chips!!

MY peanut butter cookies recipe:
1 flax egg (mix 1 tbsp ground flax w/ 3 tbsp warm water & set aside till thickened)
1 cup peanut butter
1/2 cup cane sugar
1/2 cup brown sugar
1 tsp baking soda
bake at 350F for around 12 minutes or untilt they are slightly browned & have cracks in them (like you see in the video)
3-ingredient pancakes:

I really like that you show that you eat leftovers. Most what i eat in a day/week videos are a new dish for every meal and give me the impression that a lot of food is wasted. Your videos are so realistic and fun

ohh in my case I hate leftovers, I always have a different meal every time. I just the use measurements to have just enough for one meal each time of the day So idk if its the case for them too?¿

For rice noodles, I learned that they do not need to be boiled but just soak them in hot water for 20-30mins, drain, and put them into the pan with other ingredients and stir fry a bit more! That way they’re not soggy but cooked just enough. Thanks for your videos they’re quite inspiring and also fun to watch😆😋

Pro-tip: If you're making Oatmilk at home and you want it to be as least slimy as possible, soak your oats with water and a digestive enzyme pill (or a probiotic if you have it) before blending. Comes out more like store bought that way.

something BIG i also learned about falafel (the hard way lol) is that u use soaked uncooked chickpeas!!!! so soak them for at least 8 hours and put them in the food processor “raw” and blend everything the same way and they will cook when u fry them!!! :-) makes a huuuuge difference

I do the oats and water thing all the time. Works best if you let it sit 10-15 minutes first, also helps soften your frozen fruit for those of us who have less powerful blenders.

Trader Joe’s falafel mix is gluten free! And it’s just add water! I usually add some extra chickpeas & fresh garlic & herbs to jazz it up and it’s good

(most) walmart’s sell barilla gf rice/corn noodles (namely penne and spaghetti) which are really yummy with italian type sauces (marinara, alfredo, etc) highly recommend

peanut milk is even easier to make at home than oat milk: just put 250ml warm water and a tablespoon of peanut butter in a blender and mix! you can make more using the same ratio, I always use it for smoothies.

okay hopefully this is useful to at least one person but the easiest hack to straining your oat milk is to just hold the bag from the top and slowly twist the bottom, it squeezes all the liquid out really cleanly and easily!!

You have to use uncooked chickpeas! Soak dried chickpeas but don’t use the canned ones bc they’re usually cooked

I recommend this falafel recipe minimalistbaker.com/classic-vegan-falafel-gf/ Starting with dried chickpeas is important and letting the mixture hang out in the fridge before forming the falafels helps them hold together. Also you can use any type of flour if you don't care about gf 👍
