The topic of "FOOD COLOURS and their TYPES" will covered in this video. In this video we will discuss what are food colours and what are their functions in food products and we will also explain the types of food colours like artificial colour and natural colours and also we will discuss about the the type of artificial colours dyes and lakes.
First of all we will discuss about the introduction of food colours their definition and their uses, functions along with their sources. All the topic I will explain in Urdu and Hindi language.
Define Food Colors;
Color is first characteristic or quality parameter that is perceived by human senses in in any food product.
Functions of colors:
we will also discuss the important functions of food colours in any food product like
-import eye appeal to food
-make food attractive
-also provide some Minerals and vitamins
-colors also serve as quality indicator to detect self life of food products.
Types of colors;
Then further we will discuss about the types of food colors that are natural pigments and artificial or synthetic pigment.
Natural pigments:
In the explanation of natural pigment we will discuss about the important natural pigments present in different food and the sources and functions of that pigments.
These pigments are explained here;
First of all I will explain chlorophyll pigments that is a natural pigment present in different food products I will also explain the sources, uses and functions of the chlorophyll.
next I will explain the what are the carotenoids and what are their functions and sources.
then I will explain the haeme group of pigments
the next I will explain the other natural pigments like anthocyanin, betannin, lycopene their role, function, uses and sources in different foods.
at the last I will explain caramels and mellanoidins, although both are brown pigments but there is a difference between there production process and we will also explain their production process.
Artificial or synthetic colours:
At the last I will explain the types of artificial colours that's are dyes and lakes, I will also explain what is the difference between dyes and lakes.
