I love it! Then call it Categoric Theory to remove some of the emphasis from the Categories and draw more attention to the maps between them.

Hah, I like the idea. "Categoric theory" sounds good. The only problem is probably that this will confuse people as "Category theory" is too well-established. So: always be careful how what name you give to something.
