Great points for the beginner/intermediate knife enthusiast, Sussex. Edge geometry, heat treatment, and handle comfort/ease.of.use are the top 3 that gets one 85% there ... all other characteristics are just collectors chasing Valhalla ... which is ok if one can afford (time/money/patience) to do so.

It's a funny one, people choose steels that have all these amazing properties, but own more knives than they could wear out in several lifetimes. So top quality steel is a 'nice to have', but yeah, those other things are far more important.

Thanks for showing the Penguin, glad it's being enjoyed. I would disagree with the M390 being a mid grade steel as it along with 20cv are premium even going off of the matrix of cutting performance.

Great video Ant. This is not a strong knowledge area for me and I am learning all the time. My preference is good corrosion resistance, reasonable edge retention and ease of sharpening. One of my concerns with the"super steels" is being able to strop and sharpen without the need for specialist tools and compounds. Looking for knife steels - they need to be good enough.. not necessarily Suoer. Victorinox inox is generally good enough for my light use cutting tasks.

You've put it perfectly. Most steels are suitable for daily tasks. These super steels are only really beneficial in specific scenarios. They're still nice to have though!

There's only one great steel imho, and that's Spyderco's S110v,. The ukpk and Military, in this steel are two of the best knives in the world.. It's worth paying for quality that will last a lifetime,, 😊
