@@_GunpowdertheGabite I was sick one time and ended up ordering Bun Rieu for the first time for delivery since it was a Wednesday special at this restaurant....needless to say I almost cried, it was so warm and comforting without feeling too heavy because my appetite wasn't great, I ended up having half for lunch and the other half for dinner. I'm 2nd gen Filipino-Canadian but my mom grew up in Roxas City which is the seafood capital of the Philippines, and so she'd love cooking crab with this sauce with coconut milk and spice....she'd also make sinigang (sour soup) with cut up pieces of tomato and fish....so Bun Rieu while definitely a lot different to both dishes, had some components that really reminded me of home

Vietnamese food is one of my ABSOLUTE favorite cuisines. I could honestly eat it everyday. It is always so comforting but still so light and balanced and that uses ALL the parts of your tastebuds without being overwhelming to those unfamiliar with Southeast Asian cuisine. It is amazing, delicious, diverse, and accessible for newbies. Thank you Vietnam for your amazing food that has given me tons of comfort when I needed it.

I'm Cantonese but I will take Vietnamese everyday. It's familiar enough that it's comforting, but somehow it's just pepped up by the fresh herbs & the subtle use of spices & fish sauce (not overwhelming like Thai or Malaysian/ Indonesian cuisines... which I enjoy immensely as well but it's a lot LOL)

Veggies are always there to keep sugar (carbs) rush into your blood causing weights gained and diabetes. They’re like a real hero that often overlooked.

I disagree, I never spent so much money and time on a recipe as I did to to make pho. I dunno what they use in Vietnam, but when they make it in the USA, it's at least $100 just for the stock, not counting all the spices that make it so aromatic. The veggies you see are barely cooked, so they seem to be the attraction, but really - the stock is painstakingly extracted from your paycheck and pounds of flesh and bone. Same with good ramen. Wait, did that sound racist? Please don't take it that way. I just mean that the Vietnamese have more meats to choose from than I do.

I lived in Vietnam for 3 years (and have returned for several extended visits since). I fell in love with the food immediately and have made it my mission to try everything I can whenever I’m in Vietnam. Oh man I feel like Ive just scratched the surface. It’s an incredible cuisine and naturally within it are so many regional specialties. So fresh, and simple yet complex. Also healthy. Bun thit nuong is one of my go-to favorites. Also love Cha Ca, bun cha, banh xeo, and Bo Kho, bun Bo nam Bo. You are lucky you live near good Vietnamese restaurants. Can’t find many in the rural Midwest 😢

One of my best friends is Vietnamese, and one appetizer that's always at their family gatherings are these small egg rolls stuffed with spiced meat, called Chả Giò - Vietnamese Imperial Rolls. They are AMAZING, the best egg rolls ever! They don't have the cabbage or other big pieces of veggie filler of other culture's fried egg rolls. Everything is processed into a spiced meat paste that firms up with the frying. I have trouble stopping myself from heaping them on my plate when they are available in large quantities. Super addicting! They are also commonly served with bun (also a favorite of mine), usually along with that lemongrass pork or some other meat.

We have those rolls in San Diego! My co-workers referred to them as an "ugly roll," because of the bumpy texture on the outside after frying. 😂They are FIRE! 🔥

When I was in a very diverse elementary school, in the early 80s, there was this “national dishes of the world gathering”. My family made a fook ton of only Imperial Rolls, our table was filled to the max, stacked up like a rectangular based pyramid. People kept trying it, even coming back for more. The table was emptied in less than 30 minutes, while the other tables still had lots of leftovers, even by the end of the fest..

Typically, when Vietnamese folks eat cha gio at home, we wrap it up in a lettuce leaf, herbs, noodles, etc. We wrap it up and dip it. It's eaten as a meal, not as an appetizer. Delish!

I use to live in Saigon and would take my friends who were visiting to go eat Banh Xeo. This was always a hit. You really need to give this a try if it's available at your restaurants. Don't order it to go. There's a certain "crispiness" that is lost if you order it to go. You really want to order it and eat it immediately. It's literally a favorite amongst Vietnamese as well.

Bun thit nuong is my favorite Vietnamese dish I’ve found so far. It’s sooooo refreshing and an amazing summer dish. You get fresh herbs, cold noodles, the most refreshing sauce and pickles, and smokey, toasty BBQ.

It's the first Vietnamese dish I ever tried and still my favorite. I'm still not sure I use the sauce right. Do you pour it over like Beryl did or use it as a dipping sauce?

@@catherinebond7474 Beaten Chilly and Galic with 2 spoon suger - One spoon Fish sauce - 3 spoons water - 1/3 fresh lime then Mix and try. If it's so sweet, add 1/3 spoon fish sauce. If it's so salty, add one spoon water . Fresh lime is better flavor than lime juice.

Bún Thit Nuong is my favorite Vietnamese dish. I can never remember the name, but it is so good. The first time I had it was the first time I had really had fish sauce as a condiment, and I fell in love with it.

Bún is the name of the noodle itself, Thịt Nướng is grilled meat, in this case pork, hope this helps you remember the name more easily. Next time if you can't remember the vietnamese name of this dish just say grilled pork noodle, I'm sure every restaurant will understand what you mean.

I live near a large Viet community in Queensland. My favourite is Bò Kho, beef stew, with baguette and extra butter, i love the fall apart beef and chunks of sweet carrot! Or Combination Pork Chop with Broken Rice.

I have a few times when I was there. Can’t say I am a fan. I like Hoi An banh mi. I think the bread there is better than elsewhere in Vietnam.

I'm a Filipino and I have always been dreaming to try a lot of Vietnamese food. I find it interesting due to the amount of veggies they put in and how well-balance their diet is which is a contrast to Filipino's.

If you live in Metro Manila, Palanan in Makati is well known for having a lot of Vietnamese restaurants, specializing in either Saigon or Hanoi cuisine depending on where their current chef came from. I hope someone from Hue or Da Nang can come as well, for sure they have their own twist on Vietnamese cuisine.

When I lived in San Diego I had a Vietnamese restaurant around the block that I ate lunch at every day. Whenever I felt a cold coming on I’d order spicy lemongrass soup and bring a box of Kleenex. It would completely knock out a cold before it got started!

Yes! Hoai Hue gave me one of my first and one of the best dining experiences! I'll put that dish on my list for the next time we go. We get the ugly egg rolls at A-Chau. Pho Hoa was also an incredible meal I will not soon forget. Any other recommendations - food and/or restaurants?

I like Pho Duyen Mai, Da Nang Corner, Le Bambou, etc! I'd recommend mayybee looking for restaurants that cook in northern vietnamese cuisine, southern, and central! since it's different for each region and very yummy. Some new (perhaps for you) Vietnamese dishes I'd reccomend: hu tieu, cao lau, bun rieu, canh chua ca or thom, banh xeo/banh beo/banh it/banh ram/banh khot, thit kho with coconut meat and rice!!, banh cuon.

First time I had Vietnamese food was when I moved to Melbourne from Peru, it has become one of my favourite foods to eat; one my biggest surprises was trying Che Ba Mau for the first time!

I live in Saskatoon, Canada and the vermicelli noodle bowl may as well be the city's official dish. There are TONS of Vietnamese restaurants here and the dish is super affordable. Even better with a deep fried spring roll. I usually get pork and shrimp and add chili oil and A LOT of fish sauce.

My mother is Vietnamese and most of these dishes she never made. It really depends on the region on the type of dishes and how they are prepared. My mother was big on soups like pho, sour soup, etc. She made a lot of clay pot meat dishes, but she never used coconut juice. She loved making a meal that consists of a meat with either white rice or noodles, tons of fresh grown herbs and cucumber on the side with usually soy sauce or fish sauce. Very simple. It's always good to try different dishes at different restaurants, because nothing is made the same. My mother is 82 and came to the US at 36, so I don't know if her cooking is different due to what she was taught or like I said regional type meals.

I would guess her cooking is different due to regional differences. Coconut juice is a staple in Southern Vietnamese cooking, but is not really seen in the cuisine in the Central and Northern regions of Vietnam.

Sound like your mother is from the North! Also, the way we cook changes as well due to the surplus of ingredients we have nowadays compared to the past and other reasons! So I would say your mom has old school northern style cooking

We rarely eat beef, but when we do, we often make bo luc lac. Its incredible. The dish she got was a sad rendition of it. The beef really needs a sear from an aggressively hot wok and high quality oyster and fish sauce to be at its best.

Cantonese here but I ate totally delicious Vietnamese food while in Hong Kong and always take the iced Vietnamese drip coffee with condensed milk. 😋 And the last time I tried a new Viet resto I was totally blown away by the simple looking yet full of beautiful layers of flavours🤤 Don't remember the name of the dishes but it's certainly no spring rolls, pho or bahn mi (which are ofcourse great but we know there is so much more from the Vietnamese kitchen)

OMG you HAVE to get shaken beef somewhere else. The version you got doesn't even look like the shaken beef I've seen elsewhere. Shaken beef is AMAZING when done right. Very flavorful.

Fyi: sour soup comes in varieties of choices, you got the classic with almost any kind of fish, vegetarian like what Beryl ate or even beef. Not to mention that there’s canh cá ngọt (sweet fish soup), quite similar to sour soup except for some ingredients like coriander and pineapple, and the broth tastes even lighter than the sour soup.

The clay pot salmon and sour soup she ate on here didn't look that good, though. Look for caramelized catfish (which is what Viets normally eat) or something that's a lot browner than the salmon as it should have been caramelized. And the sour soup usually has fish in it (although I grew up eating both the fish and pork rib with pickled mustard greens...both are delicious!)...so find the sour soup with fish (or maybe chicken if you're into that) with pineapple in it. We eat it with rice...never seen it eaten with noodles before, but I guess people try to be different from when I grew up and eat noodles with things like bo kho (beef stew) and ga ca ri (chicken curry)...my family ate those with fresh baguette to dip in the broth/sauce.

This is so fun to watch. As a Vietnamese, I'm super excited to see you try our food, and I was grinning for the duration of the episode. Thanks Beryl, for exploring our cuisine and a wonderful video. Coffee-wise, there's a drink called bac xiu (white coffee), which is the opposite of what a milk coffee is: while a milk coffee is more coffee than condensed milk, white coffee is more condensed milk than coffee. It's less strong, but still really good and sweet.

I love this video so much! As a Vietnamese person, I agree that most people just think of Vietnamese food as pho, banh mi, egg rolls and spring rolls, and the rice vermicelli bowls. Our cuisine has so much more to offer. I love all of the dishes included in your video, but I would like to add some suggestions: Bun Bo Hue (rice noodle soup with beef and pork that's a bit spicy and lots of lemongrass flavor), Bun Rieu (rice noodle soup with crab meat and tomatoes), Bo Kho (Vietnamese beef stew, often eaten with French baguette or can be eaten with rice noodles), and also Banh Xeo (Vietnamese crepe flavored with turmeric and coconut milk that's filled with shrimp and pork and bean sprouts and eaten with fresh veggies and herbs). I hope you and others give these a try!

As a Vietnamese, I don't rate Banh Xeo. It's too oily and if you don't use a lot of oil then it's not crunchy. Often you need to eat it right away. If you want 5 minutes it's already soggy. Also it doesn't have enough protein inside to be a balanced meal on its own.

Regarding the Vietnamese Coffee, you can go a little bit extra by adding some coconut milk or cinnamon syrup (reduce the amount of condensed milk). And even having a vanilla or coconut ice cream scoop inside the coffee. It's so refreshing on hot days

It's funny to see you eat Bún Thịt Nướng all separated. You need to mix everything in a bowl and pour the sauce on top 😆 Canh Chua usually eaten as a side dish in a traditional family rice dinner. Same for Cá Kho Tộ. They are usually eaten together as part of the same meal. You should have a bowl of white rice and just take some fish and some soup as you eat. Glad you like it!

I could eat Vietnamese food every day! It's all so good. My favorites are Bo Kho (beef stew), Bahn Xeo (crepe with shrimp, pork, bean sprouts, and herbs), and the sour tamarind soup, Cahn Chua. Oh, and pretty much ALL the salads 😊😋💜

The rice vermicelli dish is one of my fave dishes. Yes, East San Jose has the 2nd largest Vietnamese population. They also have a huge mall that sell a lot of jewelry, food, fruits, bakery and everything. Vietnamese food is also simple but gave flavorful and complex flavors.

But but if you ever bake a cake that requires cheesecake frosting and so happen to have any frosting left over you should try mixing into coffee it will take a good couple min of good solid stirring but once you see it dissolve completely proceed to drink immediantly because it's so tasty.. I discovered this mixture one night when I ran out of oat milk & sugar so I figured cheesecake frosting works in a pinch😆☕️🤗

I really enjoy this series. Like you said, people I find, tend to keep to their safe dishes when ordering foreign food and I think these episodes help to give people a better overall look at the potential foods out there and maybe give them the courage to leave their comfort zone

Huge Vietnamese fan here! Their food IS really “fresh “. It’s one of the reasons why I like it so much. I have never tried their soups OR salads. Not for any reason except for my appetite every time I walked into one. And, yes, there is a lot more to Pho than the Pho.

Love Vietnamese food! So light and fresh and flavorful! I lived in Lowell, MA for over 20 years and there is a huge southeast Asian population. Laotian, Thai, Cambodian and Vietnamese. The restaurant options are plentiful as a result. My favorite Vietnamese dishes are shrimp toast, Vietnamese crepe and Goi Tom Thit.

At home and at restaurants I've always had Bun Thit Nuong presented as a salad in a big bowl layered by lettuce on the bottom, then noodles, then the pork on top. Then you mix it all up in the bowl using the Nuoc Mam as a salad dressing. My favorite variation to order is Bun Thit Nuong Cha Gio, which adds summer rolls on top for a nice crunch. Eating all the elements together really makes a big difference in the flavors and textures.

My favorite vietnamese dishes are Hủ tiếu khô, thịt kho, bún bò Huế, bún thịt nướng chả giò, the classic phở đặc biệt and bánh mì. (I don't really know how to spell them. These are auto corrected😅).

You are correct on the names of the dishes. Just want to inform people that "Phở đặc biệt" is what we usually called Phở that has pretty much every possible type of meats/cut for that dish, you just put like beef or chicken into the word in order to differentiate the type of meat in it. "Đặc biệt" also used in other soup/noodle-based food like Bún Bò Đặc Biệt.

I was super siked to see this video! I grew up in a city in CA, and lived near a part of town called Little Saigon. I absolutely adore Vietnamese food. Anything full of lemongrass is my favorite to order!

4:30 I like the handless kids, Beryl! I'm a "soup person" and I have been hoping for a soup episode for a lonnnng time now. (And I eat soup year 'round, not just in the cooler months.) These all look delicious. When I lived in Los Angeles for 25 years, starting as a young adult, I loved exploring the plethora of fantastic Vietnamese restaurants. Thank you for this, Beryl! Your descriptions were so creative and thorough and have me suddenly wanting some Vietnamese food! (Can't wait!)

Bún Thit Nuong is so good I'm shocked other non-Vietnamese don't know about it. I find it on the menu of almost all pho places that sells more than pho. It's what I order in the summer when I don't feel like hot soup.

Growing up, I was the single Viet who would order bun thit nuong when the rest of the family orders pho. I always thought it's amazingly delicious and fresh. Pho has it's place, but I thought it weird Westerners didn't make bun thit nuong more popular as it's something most can eat and love right away.

@@damiann4734 There is a Vietnamese restaurant in a mall near our building. Its owned by a Vietnamese, fr Saigon. She started simple & her cooking became famous. So at first it was a typical Vietnamese place with Pho, Spring Rolls, & Coffee (& fresh beverages). Then she expanded her business by expanding the place, serving more Bahn mi options & local dishes & that's when I encountered Canh Kho Qua. There's more to her menu tho like fish soup, stew, grilled meat, etc. But I loooove bitter melon! 🥰❤ At times she comes there & asks us how our meals are. ❤

Sour soup is one of my favorite dishes. It's kind of hard to find a good restaurant that sells it though. Vietnam has so many dishes that it's hard to pick out things for people to try out. I like: Cha Ca La Vong (turmeric fish with dill) Banh Cuon (rice rolls) Banh Xeo (savory crepes with lettuce) Com Tam (broken rice with grilled meat and fish sauce) Bun Rieu (crab noodle soup with vermicelli noodles) There's still a ton more that's not mentioned. Of course I still love Pho, Banh Mi and Summer Rolls though.

as someone from Minnesota with a large se Asian population, we have a variety of se (Cambodian , Vietnamese pho places, and Thai places) I absolutely adore vermicelli noodle salads (usually accompanied with egg rolls)

I've never had the limeade but I LOVE the pickled lemonade I've had at some vietnamese places in Orlando, FL! I've always loved the freshness of Vietnamese cuisine and the large availability of vegetarian/vegan options. This video was awesome and I felt pretty cool for being familiar with some of the dishes!

It's very easy for you to make at home! Just make limeade with less sugar and juuust a small pinch of salt and use soda water instead of water. I would argue that Vietnam might be the best country for vegetarians/vegans right behind India since so many people are Buddhist here. If you're ever in Vietnam, please look up vegetarian places where you pay what you want. They do this to feed the community more than anything. If you are poor and don't have money, you can still eat. If you are happy with the food, you can pay as little or as much as you want to support the business. We are VERY community oriented!

Green papaya salad is a meal by itself and is perfect for the summer. I also order vermicelli bowl with either fried tofu and/or chopped egg rolls.

My mom does lotus stem salad instead of lotus root. The reason why the Ca Kho To isn't as coconutty is because it uses coconut water, not coconut milk. Back in the day when coconut water wasn't available, my family would use coconut soda to make the dish. It was one of my favorites as child who was a picky eater. Traditionally it was made with catfish, since we didn't have salmon in Vietnam.

I've always had an adventurous palate and generally love EVERYTHING. Love every type of cuisine and totally believe you should try everything once. except PASTA SALAD. Mushy pasta mixed with salad dressing-- no thanks! Until I found bun! there's just something about the mix of fresh and pickled veggies, peanuts, rice vermicelli and nuoc cham mixed with sambal that just hits right. I like bun thit nuong, but my fave is called bun thap cam, which adds grilled shrimp & chopped up cha go (eggrolls). But my absolute must-get food is bun bo hue! it's spicy and sour and rich and sooo freakin good! just don't call it pho cause they HATE that! lol!

The steak dish is also traditionally paired with raw watercress which is a refreshing bite and contrast to the beef. It’s similar to the flavor you get with roast beef and horseradish. It’s rarely seen in the US though as we rarely grow and eat that.

I’m in the Bay Area & have been eating (and making) shaking beef for 40 years. The watercress is key to this dish imo. Arugula is OK in a pinch. I didn’t even recognize my favorite beef dish ever from what Beryl got. When I think about shaking beef I never think bland - how could it be with all that garlic, crunchy fresh shallots, peppery watercress salad & perfectly tender marinated beef? Even though I have given up beef these days, my mouth still waters just thinking of a well balanced plate of shaking beef!

In Australia, we have a Vietnamese chain called Rolld that does a bo luc lac bánh mì and while it’s definitely not the best iteration of bò lúc lắc, it’s certainly innovative. That said, we only eat at Rolld if there are no other Viet restaurants to go to! Out of all the dishes showcased in this episode, the only two I haven’t tried are gỏi ngó sen and canh chua! Looking forward to making both!

Fun tip: as a Viet person I often enjoy canh chua and ca kho to together! The flavors are especially complimentary, and a lot of other Viets eat it this way. Canh chua is sour and sweet, in contrast to the ca kho to's salty and savory nature. You eat it along with a bowl of rice and play around with the ratios of rice to soup to fish ratio. It's the best if you can find a really solid place that makes it homemade style!

@@yip2188 , thanks so much for that tip! I read on a blog that you can use can use the heads and tails of the fish to make the canh chua! I absolutely adore Vietnamese food! Some of my favourite herbs are Vietnamese mint, sawtooth coriander, Thai basil, perilla and rice paddy herb. I'm also liking fish herb too!

I'm very intrigue in Canh Chua, It's tamarind based soup just like Sinigang. I'm pretty sure I'm gonna like it cause I really like any tamarind from candy to soup.

Nem nuong with fried rice paper is good too. If you're thirsty, tra mang cau is pretty popular lately. Also I've tried Vietnamese coffee in both USA and in Vietnam and I think in the restaurant i had it in the USA they make it watered down for American's tendency to chug. In Vietnam it's strong enough to eat like flavored ice with the chipped ice which is really nice on a hot day.

If anyone is visiting Southern California, specifically Orange County, go to Pho 79 (pho, bun tom thit nuong cha yor) and Brodard Chateau (fresh spring rolls, young jackfruit salad).

Bun tom thit nuong cha gio, thit kho, banh cuon, and ca kho to (catfish) are my favorite viet dishes. Papaya salad and vietnamese beef stew with bread are great options as well. I also got introduced to avocado smoothies from a Vietnamese person, and it is amazing.

Some quite good dishes but banh cuon is missing . Banh cuon is steamed rolls filled with chopped meat and minced mushrooms , to be eaten with some soybean sprouts and fried shallots . They really are worth the try .

My Father lived in Cambridge Massachusetts when I was growing up. I spent weekends there. Once a month, we tried a new restaurant. We each would order a dish and then order 1 dish we'd never had before. It was a great foodie time of my life! Unfortunately now I live in rural Western Massachusetts and have very few international cuisines to choose from, much less Grub Hub Delivery. You bring back great memories for me!

Not sure how far out in western mass you are, but Springfield has 4 or 5 vietnamese restaurants in like a 1 mile radius. My favorite is Soc Trang. Vinh Chau is also good. Also, Five Star Market is an Asian supermarket that sells prepared food. My wife loves the bun bo hue, I love their xa xiu.

When I tried to break away from the top 3 viet foods in america (banh mi, pho, spring rolls), I started with bun bo hue and eventually gone down the rabbit hole to Tiet Canh. Tiet Canh is about as far as you can take it, it's raw duck blood congealed with a basil salad on top basically

These are still too safe IMO. Next time try thit kho (braised pork belly), banh cuon (steamed rice rolls), banh xeo (Vietnamese crepe), banh beo (steamed rice cakes), ca nuong cuon banh trang (roasted whole cat fish with rice paper), hu tieu bo kho (beef stew with rice noodles), com tam bi cha thit nuong (broken rice with grilled pork chop)

Looking at Nón Lá's menu and I am so sad you didn't try the Goi Du Du (can't do the diacritics!). Vietnamese Papaya salad is my FAVORITE thing ever.
