Lamb Leg - 2.5kgs
• 2 cups of low fat yoghurt
• 2 table spoons of Turkish mixed grill seasoning
• 1 teaspoon smoked paprika
• 1 teaspoon dried rosemary
• 1 teaspoon dried thyme
• 2 & 1/2 table spoon mustard oil
• 2 & 1/2 table spoon sesame seed oil
• 2 teaspoon salt
Lamb chops curry
• lamb - 2.5kgs
• 2 & 1/2 medium sized onions chopped
• 5 cloves garlic crushed
• 50g ginger crushed (together with garlic)
• add homemade garam masala
• 1 tablespoon chilli powder
• 1 teaspoon turmeric powder
• 1/2 fresh shatkora
• handful coriander to garnish
Homemade garam masala:
• 1 & 1/2 table spoon curry seeds
• 1 table spoon jeera (cumin seeds)
• 2 bay leaves
• couple inches of smashed Indian cinnamon
• 1 teaspoon peppercorn
• 1 teaspoon cloves
Prawn curry
• 500g prawns
• 1/2 Chinese gourd
• 1 medium onion chopped
• 5 cloves garlic chopped
• 1 table spoon chilli powder
• 1 teaspoon turmeric powder
• 1 tablespoon curry powder
• handful coriander to garnish
Basa curry
• 1 & 1/2 basa fillets
• 1 & 1/2 medium onions chopped
• 6 cloves of garlic crushed
• 1 tablespoon chilli powder
• 1 tablespoon curry powder
• 1 tablespoon paprika powder
• 1 teaspoon turmeric
• 1 red peppers chopped roughly
• 3 green chillies
• handful coriander to garnish
Mackerel chutney (borta)
• 4 tins of mackerel (125g each) in sunflower oil
• 1 & 1/2 medium sized onions sliced
• 1/2 cup fresh coriander chopped
• 4 birds eye chillies chopped
• 1 teaspoon salt
