One minor issue with eating the nigiri (that style of sushi). You should be dipping the fish-side into the soy sauce. It prevents it from being overly saturated with soy sauce, and from having rice fall into the bowl.

yo, im a sushi chef at a meal of the day type sushi bar in my home town, a couple of tips for nakiri! your rice "logs" were a bit to big and a little mashed, you wanna get a bit bigger than a thumb sized ball of rice and shape with the least amount of pressing possible, the actual shapes come from the rough rice ball shaping to the fish! its done almost in 1 shot and you should never press the fish to the rice, the wasabi always goes on the fish, if it wont stick try dabbing a bit of the oil off and then place that side on the rice! your fish cut were pretty nice although they were more like cuts for shashimi, just a little thinner and your good to go. A good nakiri should always be bite sized! anyways i really enjoyed the video good work!
