This might be actually one of the rare occasions where it was actually right to not follow Ramsey completely when it came to the food - Ramsey may know a thing or two about food, but at the end of the day, he is not the regular customer you'd expect to see in a place like Luigi's. Usually when owners talk about how their old food was better, there is literally no source that tries to back that up. But given how there's countless reviews that said that they actually enjoy a mix of both the old stuff and the new stuff, it really does make you wonder about Luigi's quality as a whole - it was so obvious that he was being bogged down by the family pressure and struggle, as the waiter Joe had mentioned in the episode.
@LogeenthLive2 жыл бұрын
That being said, I'm going to Anaheim for a media event on July, I'll certainly try to find time to go to Luigi's myself in person to taste the food. You'd have to be a really good restaurant to survive the pandemic out of what looks like a strip mall.

I think italian really isn't Gordon strong suit. They have been many renowed italian chefs that have criticize his approach, not something to be surprised about tho since an italian chef is like the most picky human being available. He does did good when return them to italian basics as the use of fresh ingredients, but unlike french or british food where Gordon is untouchable since that's his background, his take on marketable italian food leaves more space to debate. Also I think that claims about missing the old stuff are more frequent in this cases because of the type of people that would go to a classic italian restaurant expecting classic (old) italian food.
@sevirakalau21712 жыл бұрын
@@nombregenerico8879 Indeed alot of the time he gives new options for the menu because the old one clearly wasn't working on its own. If they had a buncha meals on the menu that weren't popular but had like 4-5 things that everyone liked its best to remove those old things and mix the most valuable dishes with the new menu that way the regulars who supported the dying restaurant don't leave and new customers have more options. I think alot of the restaurants make the mistake of fully going with his menu without thinking (which he probably doesn't want) or going back to their old menu completely which wasn't working in the first place. But yea for these guy I think they mostly needed to lose the stressful environment (which was affecting the cooking and customer service) and use fresh ingredients (to bring the best out of the food along with the cook)

It was so surreal to see this episode, as my family were regulars here since it opened way back when. My grandparents lived across the street off of Nyon for like 40 years and my mom grew up in the area. Although she moved and I grew up in LA, this was still our "neighborhood Italian joint." Some of my best childhood memories are of this place. I even liked the over-the-top Italian decor you can see a bit of in these clips. I first went to Luigi's as a baby, and my family (who are Italian-American with roots in a similar part of Italy) and I went at least once a month all through the 90s and early 2000s, back when Dominic was running the place. The old menu was always excellent, I never ordered anything that I didn't end up liking. I met Dominic, Luigi, Tony, and Grace countless times; my grandparents were on a first name basis with all of them. All of them were perfectly pleasant and nice in all of the interactions we had with them. We certainly never overheard anyone yelling. I do agree with some commentators here that Grace was playing the crazy up for the camera. To answer the question in the video, I think the producers encourage the subjects to act more crazy or else the episode won't be interesting enough and won't be featured on-air. Since most of these restaurants go on the show for publicity more than for Gordon's advice, I think that was her reason for acting that way. My grandparents ended up moving to Temecula a few years before the episode aired, and we stopped going (as we no longer had any reason to visit the area). However, they kept up with Luigi's somehow (maybe through friends?) and would talk about how the restaurant started having problems when Dominic went back to Italy. I had never seen Luigi and Tony interacting all that much, but apparently they always had issues and Dominic was the glue holding them together. I think it was all the drama that led to the quality of the food declining. As I said, the old menu itself was quite good. But I think Luigi lost his passion and started cutting corners (ordering in ravioli, for instance, rather than making them by hand like they used to). While I was away at college in the late 2000s, my family went to Luigi's a few times and came away unimpressed. When it was announced that they would feature on Kitchen Nightmares, I was surprised, but my family were not. I went back to Luigi's in the era where they were still in Anaheim but were working off both the old and the new menus. I tried some of Gordon's food, and I really liked it. But ultimately I preferred the old menu. There wasn't anything wrong with Gordon's food, but it just wasn't *Luigi's*. The Gordon portion of the menu ended up getting smaller and smaller over time, which I felt was a bad idea, but what was on offer was still good. I think Luigi was back on his game by this point and the food was back to the quality it had in the 90s. Sure, the fare was probably "dated", as Gordon likes to say, but one doesn't go to the neighborhood trattoria for avant garde food. I've also been to the little takeout spot in Fullerton. It's now like a strip mall pizza joint more than a trattoria. But the food is still good. I never heard anything about why they had to move, other than that my family were under the impression the restaurant wasn't doing well and moved to a cheaper place. But it seems totally plausible that it had to do with some kind of inheritance struggle. I can see Tony wanting to take his inheritance and go his separate way. It's too bad. They aren't quite family friends or anything, I never saw them outside of the restaurant, but I do still know these people and it sucks they weren't able to put their differences aside. Still, anyone reading this from the Fullerton area should check them out. Luigi can definitely cook - I don't think he ended up on KN for any other reason than family squabbles.

This is over a year old, and other people have stated it as well, but it's still worth noting that Bipolar Disorder isn't just "random violent mood swings"; Bipolar is a much more gradual shift, usually over the course of several days or weeks, in which a person shifts between Manic and Depressive states. Though I don't have it myself, I have several family members with it, and yeah, it's not anywhere near what is commonly stereotyped. Barring extreme cases, you probably wouldn't even know if a person has it unless you are either paying close attention or they tell you themselves, and in those extreme ones, it's usually more a case of Bipolar exacerbating another issue. That's not to say that it isn't destructive-it absolutely can be, even in mild cases-but it's also not the violent, unpredictable disorder that it's been stereotyped as for so many years. If I had to assume anything about what caused these violent mood shifts, while it could just be her having an extremely short fuse, there are also disorders like Borderline Personality Disorder (BPD) or Intermittent Explosive Disorder (IED, not to be confused with Improvised Explosive Device) which can also explain it. However, both (and most other related disorders) would require a much larger sample size than sporadic, dramatically-edited clips gathered over a handful of days for me to form an armchair theory. While I'm here and ready to go on a sleep-deprived ramble, if you want a great portrayal of what BPD (another widley-misrepresented and publicly misunderstood disorder) is like, I would advise you watch the She-Ra reboot on Netflix. According to everything I've read, Catra is a near-textbook example of BPD, and arguably the highlight of the entire show.

I think (and this is just my opinion) the reason Grace had very emotional outbursts was because (probably) she was caught in the turmoil of the brothers quarrels and myself being from an Italian/Portuguese family I can say that matriarchs holds a very peer pressure position by the families, they are expected to keep the family together, to put out "fires" among family members etc and if you can't, you will be seeing as failure or inadequate. Grace was taking 24/7 criticism by family and she just couldn't take more from non-family members like staff and customers. Now the fights and arguments has either diminished or stop, she can relax and be more pleasant. As I said is just my opinion based in my own family and cultural background.

Grace looked to me like a person that was so on edge all the time, probably due to the bills pilling up and the family falling apart, that she would snap and lash out or just breakdown and cry if the stress during the day built up enough. Not a bad person per say, but a person being shown at the absolute worst time of their life.

I would say 9/10 it isn't the actual menu that is the problem, it is the delivery and logistics of it due to staff who have either given up, lack experience or just plain shouldn't be in a kitchen running a restaurant in the first place.
@frickendachicken18562 жыл бұрын
Part of the menu changes is to simplify what they need to buy and prep and cook. Many restaurants try to do too much with too little, as per my own experience, but many successful restaurants will do 1 page of easy to prepare food like 1-2 chicken dishes, 1-2 fish, 1-2 beef, and then simple but delicious vegetables and grains or potatoes to supplement. To keep things going they’ll do specials. So while I agree that what the chef cooks is usually not the core of the issue, a small, simple menu means it’s just easier to keep up with
@johntrevy12 жыл бұрын
@@frickendachicken1856 That is true. A lot of the time the menu is simply too large., But the items themselves (most of the time) are not the problem.

I recently saw a video on their new restaurant. It's literally a whole in the wall in like a strip mall and can only seat like a dozen people. Luigi was there when this youtuber filmed it and the food was just ok according to him. He said his brother quit and is now a janitor.
@MalleusSemperVictor2 жыл бұрын
I have a theory that by the time a camera crew comes in the owners have resigned themselves to their fate and are willing to trade their restaurant for a Kitchen Nightmares check. If what Gordon does changes things that's great but a win-win if the owners walk away from the restaurant that was going to close anyways with some cash. I think that's why they play stuff up and I think the people that come to eat in the restaurant are told about the filming so they kind of unwittingly play extras in the overblown drama.

what i get from most of US version episodes, most of the chef/owners has last the passion for food and just start serving lower quality instead or skip so many corners. what he does best, is put a fire back in the stove and wake them up, when that said they should take some advice from him, he basic gives them an template, they can built on, but most reverts back to mediocre again, because its easier prep time, instead take his advice, use the template, put on some items back, they know they can sell and try some new items that might work, keep improving the menu, until it fits the area they in and for the love of the food, keep all the item fresh

That's great that we hear of a restaurant that made it past Kitchen Nightmares on a positive note. Not too often you hear of that, I felt for the business and I felt for Grace the most, I feel her anger was real and it was based off of inner passion and the will to see this business succeed and feeling betrayed and she's putting her effort. To see her smiling and taking pictures with customers as opposed to cursing and yelling at them is great. I'm glad they still exist, I know Italians tend to be passionate about their food so I'm glad they restructured instead of completely foundering. Good job Luigi's!
@Timelord20012 жыл бұрын
If her outbursts were *not* just for the camera, and if she continued with them, then she at least deserves to fail. And for the record, Gordon's so-called "carbon copy" menu is still a better choice than *any* failing restaurant one. Let's just remember why Chef Ramsay gets called in in the first place, shall we?

We can all agree that Tony is the only sane one in this realm because Luigi and Grace like to prevent him from helping everyone which causes him to feel frustrated to the point where he doesn’t do anything as well as Luigi and Grace being rude to not just Tony but the customers and everyone who works there. Tony deserves a better job than to be working with those nutjobs.
