Woah woah woah at :51 the person uses a napkin to turn the water off then uses the same napkin to proceed to wipe the rest of the water off her arm, just basically rendering the use of the napkin to turn the faucet off useless.

So close with the hand washing, but no cigar... you don't reuse the paper towel on you hands or arms after you have used it to turn off the faucet, now you just defeated the purpose of not touching the faucet and have to rewash your hands all over again.

Why on earth did she use the paper towel to shut the water off, but use the same one to finish drying her hands!

I’m a restaurant inspector- I’ll use a paper towel to turn off the water-the idea is not to decontaminate our hands by touching the faucet. You know, if a food worker handled raw chicken, then turned on the faucet, they also don’t want to touch the faucet again after washing their hands. But maybe this inspector was in a hurry and continued to use the same paper towel to dry her arms

The air gap indicated is incorrect. The configuration they have is an air break. An air gap for wastewater requires the waste pipe to terminate 1" or more above the flood level of the receptacle. The air break is a priority violation FDA food code
