Same thing here on Linux. Ejecting /dev/sda or unmounting that partition, doesn't immediately cause a crash, but it does as the files in the RAM are attempted to resync with the real drive. Depends on the data still in your ram.

I ejected my C drive in a windows to go (somehow it let me do that) and it fixed itself after a reboot but if its a real windows install on a disk then it will be more intresting

You can use vmware setting to physically remove the hard drive by going to setting and remove the hard drive

Explanation is wrong. The reason you can physically eject a live CD is because the CD only extracts a compressed OS image onto RAM.
