1st, Never would have thought of putting sauerkraut with hummus but now I have to try it lol. 2nd that nourish bowl looks amazing. I cant seem to get anyone in my family to realize this way of eating is NOT about what you are taking away from your plate but what you are adding. I eat so much more variety in my diet and have discovered so many more flavor combinations I never would have considered pairing, that are so delicious and you dont feel like you're missing anything!

Yes exactly! I think it takes really trying the food and realizing how flavorful and filling it can be for that to truly click. That’s how it was for me anyway. And I think exposure to different kinds of vegan meals like these helps a lot too…I found that my family in friends would see what I was eating and over time they were like ooooo what’s that? Smells good! Lol and then they’d want to try it ☺️

You are such an inspiration, the best thing I ate today was brussel sprouts. I put in a bowl with olive oil, salt , pepper and onion salt, toss and put in the oven. Divine. I then add spinach and top off with hummus and vegan caesar dressing...

I never cared for kale until I tried some baby kale from a farmer’s market recently. It was mild enough to help my taste buds adjust to the flavor and now I love it! It’s incredible that at 61 I am still adding veggies to my favorite foods list. 😊

A recent obsession of mine is to make buckwheat crepes (grind soaked buckwheat groats with 1:2 water and 1-2 tsp miso paste and cook on a nonstick skillet without oil). I add homemade hummus to the crepe and top with a romaine+ arugula salad (with assorted veggies) and avocado + lemon dressing and roasted chickpeas for garnish. The combo is so delicious - its unbelievable. Definitely a keeper for 2022.
I love the gentle approach you take with your videos. They really resonate with me. The best thing I ate this week was this cheesy jalapeno grits recipe I made from Dustin Hardee's cookbook Epic Vegan Quick and Easy. It's my first vegan cookbook and I've decided to my way through it! Anyway, love your videos and can't wait for the next one.

I had a bowl of kitchari I made with red split lentils, rice and a bunch of spices with some steamed broccoli and a little bit of cilantro lime sauce I made a few days ago. So flavorful and nourishing! Also I am obsessed with the osea body oil. It's not cheap but so worth it especially if you live in a cold climate.

Been going through the same thing (post-Christmas energy wise) and not sleeping enough definitely affects me. I have sciatica issues which disrupt my sleep at night. Because I have recently retired, I have started allowing myself to sleep into 9 every day (I used to get up a lot earlier) because I find my best sleep is from 5 to 9. It's definitely helping although I would rather wake up much earlier fully refreshed.

Great tips to start the new year. I'm starting my day w yoga. Movement is important bc if I don't I'll just sit around all day feeling tired. I'm going to try sauerkraut w hummus, I put sauerkraut on avocado toast. I love that kale salad w the sweet potatoes. Looks really good.

Yes! Yoga is one of my favorites too! I fell out of my routine but I’m back at it and it really helps with energy like you said ☺️ I don’t think I mentioned this in the video but I try to drain some of the excess juice from the sauerkraut before adding it to the hummus toast so it doesn’t get soggy. That’s probably common sense but my first attempt was pretty messy so I thought I’d mentioned it lol SO good though! Hope you enjoy this combo 🥰 Happy new year ✨

I have been eating your recipes for 9 months now and love them! I'm allergic to casein, eggs, and soy and I wanted to become mostly vegan to help feel better I still eat fish and honey but my only concern is that my hair is falling out now! I started eating meat again and the hair shedding has slowed down considerably 😒 Do you have any suggestions? I thought I was getting enough protein 😕

I try to make sure that I have a mix of carbs, fiber, protein and fat in every meal and snack. I eat until I’m nice and full and I try to eat the foods that appeal to me that day. Like if a salad sounds good, great! If pasta sounds better, great! If both sound good, great! I don’t follow any kind of rules or meal plan but I feel the best when I have that mix of nutrients on each plate ☺️❤️

Sad there are still vegans in 2022 with the plethora of examples we have on youtube of this diet leading to infertility and death. I hope you can find peace with who we are as a species before your health drastically deteriorates, wishing you all the best on your health journey.

You’re going by the KZbinrs that ate raw and next to nothing and you wonder why they weren’t successful at it? That’s your “research”? We will never accept the needless cruelty to animals and the number of vegans is growing daily. Did you even watch this video? Everything is balanced and healthy. And PS, I’ve been vegan for 15 years and myself and my vegan friends are beautifully healthy. We lift weights and gain muscle like anyone else. Healthier than most too. Don’t be sad for us, worry about yourself.

She lost me at Toast & Hummus has 20g of protein - Unless she spread the hole tub on the toast, I don't see where the information was pulled out of - given that 1tbsp of hummus has roughly 1-2g protein & each slice of toast about 4-6g. A good new year resolution would be to not spread misinformation around.

I’ll send you a screenshot from the cronometer calculator I used ☺️ I had three slices of whole grain rye bread, 4 tbsp of hummus, sauerkraut and a cup of berries which totaled 21.5 grams of fiber and 20.9g protein 🌱

Nikki is probably one of the most honest of all KZbinrs that I’ve ever come across. She does her research and would never knowingly spread misinformation! Her calculations are correct. Your comment is unnecessarily rude. It’s a new year. Do better!

@@RidingRoads715 Doing better means different things to different people. For some, it means imposing their beliefs - for other means stating nutrition facts. You can pick up a tub of hummus and read the label. Disagreeing with someone base on your own research/experience does not make you a "less better" person.

@@NikkiVegan Thanks for explaining the breakdown. I think in the video you only showed 2 toasts, which did not add up to the math. Also, I believe Rye bread has even less protein (about 3g/slice) vs whole grain (about 6g/slice)

@@hastip.5852 it sure does when you’re accusing someone of “spreading misinformation around”. And yes I know how to read labels. I’ve been vegan for 15 years so reading labels is a way of life for me. It’s easy to figure out. I stand by my comment. Be nice. Don’t accuse people when you don’t have all the information. Do better.
