Try zucchini fritters. Shred zucchinis, squiz liquid (can be used for soup), add flour, egg, salt, mix. Fry a Tbsp. if mixture - will be several in a pan. They will look almost like zucchini pancakes. Very good with yogurt or any sauce you like. Can also make corn or apple fritters this way😊
