hey Lindsey! just wanted to let you know that although oats are naturally gluten free they often get contaminated with gluten so people with celiac disease or gluten sensitivity should keep an eye open for gluten free oats since these oats are not allowed to contain traces of gluten.☺️

Was just about to comment the same thing, and glad someone else said this, too. I've been GF for almost 20 years. Cross-contamination with foods that you would think would be safe is a HUGE concern. There are many great ideas in this video, but many things I would never eat, too, due to Celiac Disease. Being truly gluten-free takes major work, and it's a learning process, for sure.

I love that you actually incorporate fruit and vegetables in each meal, like there are so many videos I click on to find some ideas and have to click off once I see that they’ve barely incorporated any vegetables or eat so little vegetables and fruit. I love this xx

The cashier my local health food store def looked at me weird when I only bought coconut aminos, whole grain mustard and a kombucha haha but made the minimalist baker sauce tonight and it was SO GOOD! Trying the potato salad tomorrow, love how simple yet delish your recipes are ❤️

My diet is similar to yours. My kids are 21, 18 and 13... they all still live at home and they eat meat and gluten. My husband's diet is like the kids' but he has to eat small, low-fiber meals due to a health condition. Tip for getting any type of cashew cream/sauce smooth: to save time and to get cashews really soft boil them for as long as you can (I’ve done up to half an hour or more in the past) and they get really soft this way. Also I don’t have a high speed blender at all but if you just keep blending and be patient you’ll get the lumps out!

I put a cup of cashews in a 4 cup Pyrex container, cover with water and cook in the micro for about 4 minutes. Then I rinse the cashews and add enough water to about 3/4 of the height of water. Then blend in my vitamix with lemon, salt.

Oh, I let them sit for about 20 minutes before rinsing and blending. This softens them nicely.

Hi Lindsey! A suggestion I have (if you haven’t tried it already!) to amp up the flavor of the jackfruit carnitas is: using canned chipotle (sauce or chiles) instead of powdered chipotle, you can toss it in once you add your lime juice and water! I cook it this way usually when I want to add chipotle to a protein and the flavor is amazing

The BEST gluten free pasta brand i've tried so far is the delallo GF line. The trader joe's fusilli used to be my favorite and the delallo pasta topped it. It seriously tastes like normal pasta-- give it a try, it's amazing.

I really like the Schar gluten free sourdough! I actually like most of their bread. The baguette and pizza crust are my favorite. Not everything is vegan, but a lot of the bread items are.

This is literally the same diet I’ve been following! I have celiac and have really been trying to find more gf recipe ideas that are also vegan, so I love seeing this! Also Trader Joe’s used to make these AMAZING edamame rice crackers (like those soy ones but like 100x more savory and delicious) that were addictive, but of course they discontinued them 😭

Also! For GF pastas, I highly recommend the brands Jovial and Ancient Harvest (you can usually find them at Whole Foods) ...I’ve tried a LOT of pastas and those are literally identical to the regular stuff (I don’t even miss it)

Beginning to think I need to be Gluten Free. Last two days I have been having aches and pains that I've haven't had. Aches and pains I've never had before. And I think I've figured out why. I think I'm becoming intolerant to it. There is good Gluten Free products out now. Specially some of their pasta's are good. I actually found bread that is really good. Messy food is usually the best food. lol. Those looked really good.
