You miss a few things in my opinion. During the time skip we know Chichi trained Goten, in this alternate universe Gohan would train Goten. Goten and Trunks would grow much faster. All 4 become significantly stronger.

Gohan losing to majin buu is kinda nuts - if he's strong enough to smoke dabura in his base super Saiyan form then his ssj2 form should do something to buu. Also I find it hard to believe that a Gohan who has a new resolve (being gokus successor and given his respect for his father he would take this seriously and train hard) only becomes majin vegeta level after 7 whole years of training. One year in the HTC brought Gohan from not even being able to use ssj to mastering ssj and tapping into ssj2 albeit briefly. If you apply that growth to 7 years he should be lightyears ahead of Goku and vegeta especially considering the fact that he has more potential than both of them which is constantly being reiterated to viewers. Writing aside if we apply that logic then Gohan with 7years of training should kerb stomp fat buu

I mean, while Gohan in this AU realizes that he holds a responsibility as one of the universe's strongest fighters, he still isn't big on fighting. I'll apply my own headcanon and assume that while Gohan still trained, he didn't train in majority, advancing in his studies and getting with videl and what not. Gohan losing to Buu makes a lot of sense too. SSj2 is 2 times stronger than ssj, and Buu is many times stronger than Dabura, so It makes perfect sense that Gohan would still lose.

Honestly, DB is kinda crazy with multipliers and potential, Saiyans get a ton of crazy forms that multiply their power by 50, 100, 400, SSG(Probably around at thousand, but at least stronger than SSJ3), SSGSS(50x SSG), and Kaioken on top of that. Most other races get nothing, especially humans and they have to make villains incredibly powerful or the hero’s incredibly stupid so that they can fight the heros who have multipliers/forms and many allies(if they all just ganged up on an enemy, they could probably beat them easily since most operate alone such as Frieza, who has his army, but they are weak, Cell and Buu, who were handled well because of absorption and regeneration, and Jiren), they would probably have to buff the enemies and have more fighters.

Gohan’s my favorite character. Always will. But I was thinking what if Gohan can train and do the things he’s doing now at the same time. It’s possible to be a scholar, a family man and train to get back stronger or way than you were before. He doesn’t need to be the strongest but to be stronger enough to be ready when another evil new or old threat tries to conquer earth. Not just to be relied on Goku or Vegeta or just Goku to protect it. He could be a main character. Doesn’t need to be Goku all the time to save the earth. I don’t really want him to be the strongest just to be focused on more and other characters too.

It still wouldn't be enough to be on par with the foes they'd face. The difference between say, a Gohan with a training routine, is that while Gohan would train regularly, he still lacked the initiative, even in a fanfiction unless you destroy his character completely, that Vegeta and Goku have to seek not just higher levels of power, but more and more ridiculous methods of training. So he'd have to literally have periods of his life where he just goes monkey neuron activation and train for god knows how long, which isn't his character to do, and even then, it wouldn't be the 24/7 sigma grindset life that Goku and Vegeta have towards training. He would literally have to throw his current life away to come close enough to stand side by side with them against the more powerful foes like Jiren, or Golden Frieza, who have godly levels of power.

It's 3 months old but people have got to stop saying Vegeta didn't unlock ssj2 until he turned Majin it's just not true. During the time skip he never stopped turning and he unlocks ssj2. Now you might be asking why did he allow himself to become a Majin it's because the Majin mark proves a power up, and with Goku coming back and Vegeta witnessing Goku's new power didn't want to lose to him again so allowed it. Kinda dumbed it down but there's videos going into great detail on why he let himself become a Majin

There's a fuck ton of issues I find with this What If. First of all, Vegeta already had SS2 before becoming Majin. He even says so when Gokū transformed to SS2 against Yakon. He said "So you've achieved the same power Gohan had as well, Kakarrot", implying he also has the form after 7 years. The only reason he went Majin was because Gokū's SS2 is stronger than his own. Secondly, Gohan's power would've far eclipsed SS2 Majin Vegeta's power. If anything, he should be right between SS2 Gokū and SS3 Gokū. Meaning he's 2x stronger than both SS2 Gokū and Vegeta during their fight. That still wouldn't change much of the story, but it would make the power scaling a lot more consistent. Zamasu wouldn't take Gohan's body because he didn't show any god ki during the Tournament. Zamasu only took Gokū's body because he sees mortals possessing god ki as an insult to the gods. Your explanation as to why he wanted Gohan's body makes sense at a glance, but only at a glance. If you think for more than 2 seconds about it, he would've picked Jiren's body instead. I'd assume Zamasu would know about the rumoured mortal from Universe 11 that is stronger than his Universe's God of Destruction. If a god of sleeps for years at an end knows this, surely an active apprentice to a god such as Zamasu would know as well. SSBE is speculated to be SSG stacked with SS2, so your Rosé 2 should've been Rosé Evolution. Gokū didn't leave the rice cooker at the time machine. Muten Rōshi failed to give Gokū the talisman before he left in a hurry. In the anime version, Gokū forgot the talisman instead. This is why the manga is better. Ultimate CANNOT be stacked with other forms. All transformations Gohan would've gained would simply power up Ultimate. The way you utilised Ultimate only makes sense in GT. This is NOT GT. Vegetto didn't defuse because he ran out of ki. He defused because Potara isn't designed to handle Gods of Destruction level of power. Their power output essentially overloaded the Potara. This would still be the case if Gokhan or who you called Kūhan used a combo of SSG and Ultimate, a power that is nonsensical when you consider the way Ultimate works in Super. Whis would NEVER meddle with the future timeline fiasco. The best he could do is have Shin transport him to the Future and revive Vegeta there and take him to the past. And this would only be done if Beerus demands it. And considering Vegeta was the second strongest fighter in Universe 7 at this point, I'd say Beerus would tell Whis to get the Prince's ass back home. Please use Grand Priest. Grand Minister is a weird dub change... Gohan can't unlock SSG without training under a god. SSG isn't indicative of saiyans having the potential to become gods. It's a symptom of saiyan biology which adapts through transformations. It's a nod to the Oozaru. Any other race can become gods, but most of them won't have a transformation. Gohan would instead unlock Beast in this case. Gokū would NEVER want to have his potential unlocked by Old Kai. He and Vegeta HATES the idea of having powers that aren't earned. He wouldn't regret not having his potential unlocked. Also, you followed the anime timeline. If you paid attention, the Room of Spirit and Time was blown up by Vegeta before the conversation with Old Kai occured in the anime version of events.
