In DK Summit, when you got respawned after the "cannon" you hit the first checkpoint which is why you were in first when you got respawned so you could've gone back, hit the last checkpoint and maybe get a lap count that way

You can actually get about halfway through Grumble, but you get stuck when you leave the cave section. Any part of Grumble that falls has no collision, so you can use those to abuse checkpoints, but then you get stuck between the two moving platforms.

You could definitely do a lot of ultra shortcuts on maps like moo moo meadows and Luigi circuit like that. Edit: since you spawn in first place behind the line in dk summit you could just go back to the key checkpoint, also you can go into the cannon slowly
