I didn't really think about it too much but Muzan really fumbled the bag. If he acted at any point before the Hashirs training arc he would have styled on them. But because bro got his shit rocked by a long dead swordsman that Tanjiro shares some traits with bro sent his lackeys in one after the other instead of squashing the Demon Slayer core every time they began to rebuild from the last squad wipe.

Yeah he would raise tanjiro and eventually absorb him so that he can conquer the sun. But think about it. The reason tanjiro can use sun breathing is because his family works with fire for decades and also because he's soul is pure that it shines as bright as the sun but if muzan were to raise him then his soul would be tainted and he can't use sun breathing probably.

That is NOT the reason he can use sun breathing. His dad is the reason, the Hinokami Kagura dance is sun breathing, and Tanjiro learned the dance by watching his dad. Not at all because "his soul is so pure that it shines a bright as the sun" or because his family "works with fire".
