I think the only reason God and Dealer aren't allowed is because those names are already taken in the game. It would be confusing if the Dealer and the player had the same name, and if you sign the waiver with "God", then the waiver you find in the chest that's signed "God" could be interpreted as your own waiver, which is not the intended interpretation.

basically, in the game there is a waiver item you can get and view for a few seconds, it is a bloody contract signed by god, which hints at one of these two: 1. God himself played the game and died 2. The game takes place in hell, and that contract is made to mock god and call him weak now, if you try to make your name "Dealer" or "God" in the contract YOU sign, it won't allow it, forcing you to enter a new name
