NetLogo videos never get many views even though NetLogo is one of the most used agent based tools for examining complexity and emerging behaviour. It would be nice if you can explain the meaning of the models and demonstrate them using NetLogo

Can the grass, sheep, wolves be modified to include multiple species in each trophic level and each of those species to reproduce using genetic algorithm to optimise its parameters (like speed , color, rate of reproduction, metabolic rate, something else, etc.)?

Absolutely. as long as you are a strong enough programmer you could set up systems like that relatively easily. For example, you could set up a sheep breed, each containing owned variables that are determined by either a "sub-species" or simply by different markers.
