Very interesting. In every discussion of safety, some reference of the risks vs the benefits would be helpful. For example, how many people die from consumption of raw milk, as opposed to how human health may suffer by drinking milk that has had the enzymes/good bacteria/vitamins taken away. In US states where raw milk is permitted, is there a noticeable increase in death/illness from common contaminants, or has it been handled with good milk handling protocols? Also, as an aside, I live in Australia which bans unpasturised dairy, but in recent years the importing of raw cheeses has been allowed. I am French though, and have never heard that raw products are becoming contentious in France.
