Thanks for your information. I agree, less than 60% is good. The ideal, hopefully it is found and better performance, between 50 and 55%.

Agree! For some 57-58 works as well, which is why targeting under 60% is a good range.

Hello I just viewed "four reasons I don't teach inventory" and I see your point. My question is: How can we get an accurate prime cost figure if we're not taking a detailed inventory check thus providing an accurate COGS figure? Thanks

Good question! This video on Food Costing will help answer that question: kzbin.info/www/bejne/lae3i3xnqJeGfNU

Hi Hugo! I am sorry, but that is not something that I currently have. Instead, I created a software program that tracks all of your expenses and calculates Prime Cost for you. Check it out: www.clickBACON.com

Is the labor includes all labor, OT and salary?

Yes, it does.

I assume we’d add rent and utilities to labor.

At the most basic level, the only thing that goes into food cost is food, the only thing that goes into labor cost is labor. Here's a couple videos that Ryan did that might help out. Should Labor & Utilities be Included in Restaurant Food Cost: kzbin.info/www/bejne/gJu5ZWOdeMyjaZI Restaurant Food Cost, Labor Cost & Prime Cost Software Has Never Been Easier: kzbin.info/www/bejne/Zp7Ngat3i6eNfq8 Restaurant Financials Are Complicated!: kzbin.info/www/bejne/jpmpkpiQa5tqZpo We also do a free call (usually) twice a month to answer any questions about our software clickBACON and more broadly, restaurant financials in general. You should join us! Get notifications of the next call here: www.clickbacon.com -Dawn, Team TRB

Intuitively I’d think each item sold has a different cost and price, but the rent, utilities and labor would somehow be applied to the profits on each item. Scratching head.
