Excellent and informative explanation of what tea is and all the different types. I didn't know how complex the world of tea is, but comparing it to wine is very apt!

Thanks for this wonderful introduction to tea! You helped answer so many questions we had so succinctly. After learning a ton about coffee from folks like James Hoffman and upping our experience of coffee, we were thrilled to discover your channel and start our journey to experience the sublime possibilities of tea. Subscribed, watching through your many excellent videos, and excited to place an order of your tea to enjoy. Thank you, Alice!

Hi Alice, thanks for this video that explains tea categories so clearly in such a simple way! I noticed a brief explanation about yellow teas in one of the comments here, would just like to know where would yellow teas be on the spectrum of oxidation that you showed in this video? Also, would like to suggest that it would be great if you could consider making a video explaining the concept of the "Ten Great Chinese Teas" as well!

Hi James, thanks for watching and for your suggestion. ☺️🍵 Yellow tea is oxidized to a similar degree as white tea, but using a different processing method.

Hello, Alice. Great video as always, very informative and a good way to introduce tea to people. I'd like to know why you didn't mention Yellow Tea in this video. Thanks! :D

Hi @DarfurPlayer, thanks for watching, we’re glad you enjoyed! This video is intended to introduce new tea drinkers to the major tea categories, explaining the differences between the readily available styles that make up the majority of the tea drinking world. While yellow tea is technically a standalone category of true tea, it accounts for a minuscule percentage of China’s total tea output, with most modern "yellow teas" more closely resembling green teas, rather than the historical tribute teas the category supposedly emulates. Given the intended audience of this video -- as well as true yellow tea's relative inaccessibility to most tea drinkers -- we decided this wasn't the video to introduce the category. It is for these (and other) reasons as well that we choose not to offer yellow tea in our collection (perhaps the topic of a future video?). We hope this provides clarification and would love to hear your thoughts. Thanks again for following the channel!

@@redblossomtea Hey, Alice! Thank you for always answering my comments! Glad to see a blog post about one of my past questions - if you recommended rising or not. Anyway, getting on topic, I do agree with you that yellow tea is the most inaccessible kind of tea and that is almost impossible for anyone to drink "real" yellow tribute tea from Sichuan or Hunan even in China - unless you're someone really important (which is not my case lol). However, I love learning more about history and intricate points of Chinese culture and tea, it is always fascinating to learn more and to be able to sip, here in Brazil, a cup of Chinese tea full of tradition and history. That being said, I understand your decision and loved the video - I guess having a separate video talking more about yellow tea and why you don't sell any would be welcomed. Thank you so much again! :)

No need to feel that way! Drinking tea is a learning experience - it’s as complex and vast as the world of wine, and that’s what makes it fun! Even after 35 years selling it, we’re constantly learning new things about tea as well. If you haven’t had traditional Chinese tea before (and are interested in trying it), we’d recommend picking up a Discovery Collection from our website (or come into our shop for a tasting if you’re in San Francisco!) so you can experience the difference for yourself. We’re always here to offer advice or recommendations along the way! ☺️ The way you brew tea also dramatically affects how it tastes.
