All power is transmitted across high voltage lines as 3 phase, even when supplying residential locations. This is due to transmission efficiency/loss. (Yes, they could come up with a system that uses more than 3 phases to further increase transmission efficiency but the returns are diminishing.) The main reason why 3 phase is advantageous for large facilities is that 3 phase motors are more efficient and self-starting. Single-phase motors require a method of starting them spinning. Ceiling fans usually use a capacitor. Desk fans use a coil of wire to induce a small out of phase current just to get the blades moving.

This is a very important topic for me at this time as I am in the early stages of planning and building a ice cream/ frozen yogurt/ slushies and coffee tea café. I recommend not explaining anything you don't do. You said you, "...are not an electrician". I'm not going to my bartender to fix my car, nor my banker to fix my plumbing. Now they may understand these things, but they do other things for a reason. You may indeed have knowledge, but that's not experience. There are too many "school teachers" out there now with tons of book knowledge and no practical experience.
