There's a brewers yeast called "Wild Brew Philly Sour", it's made by Lallemand. It produces alcohol and lactic acid for sour beers, it was found in a graveyard in Philadelphia.

They set unleavend dough out, I suspect, leaving it longer than usual. Flour has starch and sugars, which the bacteria obviously settled on, to feed, increasing the dough's size. I guess 'whoever' decided to bake it and see what happened and was more than pleasantly surprised at the result. Repeated experiments with similar, if not the same, results was passed on by word of mouth and it became tbe standardised method of breadmaking, then beer making, at some later date.

Right at the start, but its easy to miss. The man in the woods mentions that yeast is fungi! 😆 A little gross, but cool too!

good thing they didnt show how to extract the microscopic fungi from the rotten trees n stuff. else people would be raiding the forests for their homemade yeast ;D

What about yeast that just grows on its own when making fermented products without any starter culture?

I think the same natural places as mentioned at the start, but odd particles will be picked up into the breeze. As far as I understood it, homemade fermented stuff without a starter culture picks up spores and bacteria from the air and it changes depending on season and location.

It's a bacteria, which is found in the air, making it easy to attract to a starter, even in your home. Thatl's why it's attracted to dead oaks.

The professor forgot to mention the yeast in the air. Most remiss of him. It's abundant in people's homes, which is why it's so easy to cultivate your own for baking, creating an endless supply at a fraction of shop prices.

I GOT A QUESTION... WHat i need to do to make blocks of yeast in home? DOsnt matter if its take a week or longer. And im refering to Fresh Yeasts cubes, not sour sourdough starter. I looked up and i can use dried fruits to get yeast. WHat i want is to make fresh yeast cubes on my own

Flour and water. The flour contains starch, which the water draws out. Add sugar, such as molasses, honey or sugar itself, throw in some heat to incubate the mixture in a confined space and the yeast feeds and reproduces. This causes Co2, which makes bread rise.

Why do they start from one gram instead of one kilo? Seems like you could cut production time in half by just starting with a kilo.

if you listened carefully the yeast is a microscopic organism/fungi that grows in rotting vegetation. what they did not show here is actually how they extract the microscopic fungi to gain that 1 gramm of yeast i also could imagine that the yeast fed sugar to grow that large in the tanks also suffers a bit quality compaird to the 1g yeast it started with

Where do you get the 1 kilo? You grow it. Why not take 1 kilo from the last batch? It is vital to maintain genetic purity, what comes out of the batch fermenter is probably mutated (a bit). The mother cultures in the fridge are checked every time they are replaced. That can only be done in very small quantities.
