Herbal (or Pizza) Syrup (1 to 1 ratio):
300 grams Sugar
1.5 grams dried oregano
1.5 grams dried basil
.5 grams dried thyme
300 grams Water
Heat until it is clear stirring occasionally
Strain out herbs by running through strainer then cheese cloth
Pizza Cocktail:
Build in shaker
Add four cherry tomatoes cut in half
.75 oz. or 21 ml. Herbal (or Pizza) Syrup
2 oz. or 60 ml. Vodka
Pinch of Salt
Few twists of black petter
Add ice and shake
Double strain into glass over ice
Garnish with basil
Ice Cream Sunday Cocktail:
Build in two shakers
SHAKER 1
1.5 oz. or 45 ml. Vanilla Vodka
.5 oz. or 15 ml. Bailey's
.75 oz. or 21 ml. Simple Syrup
3 oz. or 90 ml. Whole Milk
Add ice and shake
Set aside for a moment
SHAKER 2
1.5 oz. or 45 ml. Creme de Cacao
1.5 ml. or 45 ml. Heavy Cream
Dry shake lightly
Strain shaker 1 into glass
Top with shaker 2
Garnish with a cherry

I once had a cocktail with components that were infused with tomato, iberico ham, and herbs. It wasn't labeled as a pizza cocktail but it was fucking amazing, and like an upscale pizza-based cocktail. I can't recall the ingredients but they involved a dry vermouth and a bourbon.

@@AhNee "black pepper", or peppercorn. It was just a minor typo. He mentions that you can't exclude the salt and pepper from the cocktail in the video, as well, so context confirms that.

My husband suggested something similar, like using a yeasty alcohol as the base instead of vodka. Personally, I don't think it's necessary because he was more going for the essence of the pizza, which he seems to have captured. Not to mention the fact that there are so many types of crust (sourdough, cornmeal, almost nutty flatbreads, etc.) that it would probably be more divisive given that different people prefer different types of crust.

I was thinking something similar. A friend and I mix roughly equal parts screwball, raspberry liqueur, and miller high life to make a PB&J sandwich shot. The yeast and cereal flavors of the beer are really what make it work.

​@KyleRayner12 interesting! I always add dried garlic to my nooch haha and some black pepper. I don't think it tastes like parmesan it's just a toasty umami flavour but it can fill the same niche as parmesan like on a ceasar salad.

@@Rose-jz6sx That makes sense, but it'd still be interesting to add something more reminiscent of cheese itself, like the aforementioned paremesan rim. Cashews are used for vegan cheese, so I'm wondering if there'd be a way to get that flavoring in there.

Just a heads up, the red bar at the bottom of the thumbnail on smart tv looks exactly the same as the progress bar that appears on videos that you already watched. This made it seem like I already watched the video even though I hadn't!!! Wouldn't want for some viewers to miss it :p

A classic napolitan pizza has fresh mozzarella which isn't that cheesy in flavour but mostly creamy, so maybe floating a little bit of (shaken) cream on top might be a good addition to represent fresh mozzarella

My method of saving fresh basil is to put it in a blender with vodka and store the result in the freezer. I add to cooking whenever needed and the alcohol boils off.

I buy a bottle (750 mL) of the cheapest vodka, use a whole pack of basil, blend, and put the whole thing in the freezer.

You may have been able to add a fresh-cheese note to the pizza cocktail by substituting a portion of the table sugar in the 2-to-1 simple syrup with lactose sugar. This won't curdle as it's not protein and is about 1/3 as sweet as table sugar, but not significantly hygroscopic.

I just wanted to say: I'm not even a big drinker (current bottles in my home: Amaretto Di Amore Raspberry, Chambord, Grand Marnier, and a bottle of brandy whose label I can't remember - and only the GM is "mine," so to speak), but I've been binging this channel for the last 2 months. It has been both informative and wildly entertaining. I've been taking notes on what I'd want to stock when I finally am able to curate my own "home bar," so to speak. first thought on this is that using syrup to deliver the herb flavors and then pairing with tomato would give you close to a san marzano pizza sauce type flavor

I appreciate the return of two videos a week. I can't imagine how much work it is to plan, create, edit, respond, and whatever else goes into making this show happen, but I think I can speak for many when I say thank you Greg! I hope your able to take some time for yourself and your family during the holidays I always get excited to see each week's videos. I miss the midnight local (I work the overnight shift so I would listen on either TY or iheart ). You're a talented and creative person, and I hope we can all see the good in people this holiday season. I hope everyone can take a little time these next few weeks and relax, talk to someone you havent heard from in awhile, tell people how much they mean to you, and enjoy every moment you can. There's a cocktail bar in the Lower East Side of Manhattan called Double Chicken Please that has been popping up on a bunch of "best of" lists lately and in their back room, they make a "Cold Pizza" cocktail that uses parmigiano reggiano. Haven't had it, but there are plenty of videos of them making it because the garnish is a little edible pizza decal on the foam. They have a lot of interesting cocktails, with their back room cocktail menu inspired by a bunch of different dishes. I've only been once and it was very good!

I made some pizza-themed popcorn, and it's pretty good! It hits that pizza craving for me idk, maybe 80% as good as the real thing? The only improvement would be to find a way to include tomato somehow. Maybe a sundried tomato, but I didn't have any on hand. 2 parts each: dried oregano, salt 1 part each: dried thyme, dried basil, fennel seeds, black pepper, msg grind fine in a mortar & pestle mix with olive oil in a big bowl with a lid to make a thin sauce shake the popcorn in the sauce thoroughly (I go by the ten second rule like a cocktail shaker)

For the pizza cocktail, I'd maybe try rimming the glass with parmesan, and getting it to stick by first rolling the rim in olive oil, as opposed to citrus juice. And then maybe a light sprinkle of red pepper flake and/or dry oregano over top, so you really get the NYC slice shop experience.

The work on perfecting a cheesy cocktail could also work for the Mac and cheese he was planning on having the night of the break in. But like the cheese pizza that was already eaten the first night with the family I don't think he ever got around to eating it.

I made a “pizza negeoni” with Moletto tomato gin, muddled basil and oregano garnish. There should be more pizza cocktails! I’ll give yours a shot! It sounds good for sure.

An easy short cut to the pizza cocktail...Pizza Pie'Chuga from 451 Spirits in Columbus,OH. It is a white whiskey infused with sun-dried tomato, garlic, basil , pepperoni and whole slices of pizza before being re-distilled. And somehow it does taste like a pepperoni pizza.

There's actually a pizza cocktail called "cold pizza" from a new york city bar called "Double chicken please." It's a tequila "flip" with basil, tomato, parmigiano regiano, honey, and burnt toast. I' haven't tried it but i heard it's good!

Reminds me of the caprese cocktail one of the bars near me made for their summer menu - their main ingredient was an olive oil washed vodka, and the presentation was more martini than old fashioned

J.P. Wiser's apparently has a vanilla whisky now, which would probably work well in place of the vanilla vodka if you can get it (it's Canadian). It's sweet af, so you could completely omit the simple as well. (It's got a bit of an amaretto vibe to it, although it tastes less like alcohol than Disoronno does. Somehow.) My ID came in a week early and I got to go _into_ a liquor store for the first time since the old one expired in 2020 lol

I once had a pizza-inspired ice cream sundae at Eataly! It had goat cheese ice cream, basil gelato, and tomato gelato all drizzled with olive oil! Surprisingly good!

I think a little bit of coffee liqueur in the cholate float would do well to compliment the flavor of the chocolate and serve to make more of a visual contrast in the ice cream drink. but def a good starting point!

Tip on the syrup... simmer your herbs (or whatever you're making a syrup of,) in your water first. Strain, _then_ add the sugar. It's just less messy that way, and you also won't gum up your strainer/cheesecloth with sugar.

The first time I made basil syrup, I strained the basil out after adding the sugar. I lost most of the syrup while straining it because it all stuck to the basil, lol. That's when I learned the lesson you're expressing, here.

Double Chicken Please in NYC has a pizza cocktail called day old pizza. It's an amazing cocktail and it sounds very similar to this but with a sour dough note as well. It was one of my favorites on the menu.

Sounds intriguing. All the spices in the pizza cocktail remind me of of a cocktail I used to enjoy which was comprised of Glenlivet 12yr, Lehua Honey, and Housemade Chili Pepper Water, served in a glass with a smoked salt rim. I dunno if they had any unlisted ingredients.

About a year ago, a local cocktail bar in my area had a fantastic drink that might be similar to what you're trying to achieve with the pizza cocktail. I can't remember all the ingredients off the top of my head but I know they used a tomato shrub and feta-washed tequila. I then believe they used basil they used basil and maybe some citrus. All I can remember is that it was fantastic and savory.

Would love to see you try to make a butter beer - I was thinking butterscotch schnapps, spiced rum, cream soda with a whip of cream, vanilla, and amoretto and a caramel drizzle

Use some Smoked or wood bitters to get a pizza oven smell and taste on it. (maybe coat the glass with it vs incorporating it. Don't put cheese in it but i think a garnish of a few small mozzarella pearls, an olive, and maybe a pepperoni cube. A little flavor enhancer to snack on. A 1/2 oz of a bread grain forward whisky or even like a hearty beer might add A LOT. Add some basil into the shaker

The tomato and basil cocktail reminds me of the Caprese Martini I first heard about as a running gag/story point in the weird ass Neo Yokio anime from a few years back. Looks like a few people have had a crack at bringing it into the real world since. I'm not sure doing a show on a barely remembered anime series would do wonders for your SEO, but turning a basil, tomato, mozzarella and vingarette salad into a martini might be a little bit of fun if you want to keep messing with savoury cocktails.

Whatever is in boba tea cheese foam is excellent and may work for a topper for a cocktail to add “cheese” flavor without overpowering

I remember having this one sweet vermouth that had a strong herbacious flavor like he's describing, though its more rosemary than oregano. I'm wondering if I can make a savory cocktail with it.

Suggestion for the pizza drink: a parmesan foam topper? Or maybe a fresh mozzarella ball dipped in balsamic on a cocktail stick. If you're going for a pepperoni pizza, a mini skewer of black olives and uncured pepperoni cubes.

As someone who worked at a pizza shop, you might be surprised to know that it was typical to ad a portion of sugar to our sauce to knock off the tinny edge to canned tomato - Also! you should think about garnishing it with Bay Leaf.

When I asked for holiday cocktails, I was thinking whiskey/cranberry/peppercorn maybe garnished with a sprig of basil or rosemary. What I got was a haunting by Kevin McCallister. I'm okay with this. I'd still like some fresh new cocktails that I will actually want to drink.

Maybe you could oil wash the vodka in cheese oil for the pizza cocktail. I used a similar method to make a Cacio E Pepe dirty martini with parm stock and parm oil and it was delicious!

In some beers they will add sweetness and some creamy mouth feel they use lactose since it is a non-fermentable sugar. I wonder how it would taste if you make your syrup with that instead.

i said it with the mcdouble cocktail and now again with pizza. you could make a cheese foam. it would give it a light cheese flavor without being disgusting. another way of incorporating cheese would be to make a cheese touille by baking it in the oven and having that as a bar snack alongside your drink, but if you really want to incorporate cheese into a drink, i think foam is the way to go.

Vanilla vodka is fine as a starting place, but lately my local liquor store has had alcoholic whipped cream and I think I would top your sundae drink with some of that.

You could have done a bloody Mary for the pizza one man. If anything with the words cocktail, and pizza are put together my assumption would be a bloody Marie. Serve it hot like an alcoholic borscht too. Vodka topped with Marinara sauce with pizza toppings like a soup. Then grate cheese on top, blow torch it for an effect if you want. It would be fairly tame compared to a lot of blood Marie recipes out there.
