One of my friends gave me some of that "Slap Yo Mama" . . .I like it! My kin have been from Mississippi and Louisianna for decades . . no one EVER got sick or died from enjoying catfish. 😉Your results looked excellent! Justin Wilson would approve. How did you get your sliders to stay together using such lean meat? I have tried so many times over the years and mine always fall apart. And also I'm a bad cook. LOL

I loosely pat them into balls and then flatten them out with my hand. I try not to work them a lot. And then I place them in a really hot pan and I don't touch them for a few minutes. Hope that helps
