Fascinating. I am mid order process in the US for half a beef. Probably the 30 or 40th time. And if I didn't know better, listening to this video, I'd assume we were not talking about the same animal or process! I have never even heard of many of the cuts and I had no idea beef got pickled! This is why I watch!

I love hearing from people who buy in bulk like this too and especially in different areas of the world to appreciate the differences. Do the cuts look similar to yours but with different names? Or are the cuts themselves different there too?

@Bush_Edge_Homesteading_Aus Both. MY selections largely look like yours. My friend I am sharing a beef with? Looks like a totally different animal... Very specific, by the muscle, lots of extra processing. Sausages smoked and unsmoked, jerky, and a ton of very specific cuts - and she does.not. take any offal, fat, soup bones. It's kind of like picking up specific cuts from the grocery store...

@jenniferr2057 it is pretty cool you can get that diversity of choice. There wasn't any options for small goods type items for us from this particular farm. But hubby does a lot with his smoker at home.

We are collecting our first WHOLE cow tomorrow. I’m salivating thinking about it. 🤣 we usually get half but our mega family size means we are getting the whole, beautiful beast this time. I’m grateful to the farmer and the beast ❤️

A digital scale should be on a hard surface . ARRR you fixed this issue. The big bonus is getting direct and knowing it's the quality of the farm, not any sourced meat that could have unnatural interventions.

I am about to try a trial pack of meat from a farm. With the cost of living and profits supermarkets are making, i decided i would prefer to give the farmer my money than the 'big boys'

The previous video is incredible, as the farmer actually took us out for a farm tour during our pickup. She is so incredible to deal with, so this is the second time going back to her at Sheffields Cottage Farm

I’am sure the quality of what you bought is far superior than what you buy at the supermarket . I think it is the initial cost that would scare people off doing this .

I absolutely get that, as it is definitely a bigger upfront cost. For us it is like an investment, for the quality and flexibility we have to cook with. Also a bit of future proofing with the way prices seem to keep going up with food. But it does take planning, saving, then the buying in advance. Instead of buying as we go.

@Bush_Edge_Homesteading_Aus absolutely. I have written you other answers but they wouldn't post. Let's see how this goes. I believe my packaged beef, that goes to the butcher Monday, will cost me 2200asd based off hang weight of 345 lb/157kg. You made a comment in your video about $13/kg for something. I could not buy lowest quality, conventional grocery store beef for $3.74/lb here. I just havet had time to go back and finish comparing. One thing I did notice was how much more we get back from the butcher, but that may be choice. It's not legal for a butcher here to sell or benefit from any part of beef that I don't take. So, to my best understanding, if I don't take all the soup bones they just get disposed of. So we get internal organ fat, kidneys, liver, tongue, heart, etc IF we choose to.

what fat percentage is the mince, if its 5% its value is double what you've put. 100% that isnt 18% fat it might be 10% so valued around 15.50 a kilo but from my experience its normally sitting between 5-10% the supermarkets are normally the place that does budget beef at 18% fat

There are sites such as "Farmer to Fridge" which you can google and provide your post code and they will give you a list of farms in your area that will deliver to you, or you can go and collect.

We are in Victoria, but the platform I was showing in this video is called Farmer to Fridge and it has farmers all over Australia on there. It is as simple as going to their website and putting in your postcode. It then displays all the farms listed with them in your area. I have a couple of other vids on our channel of previous orders through them too. We have purchased both beef and chicken from different farms.
