In Argentina we eat a lot of meat but there is a sort of misunderstanding, we mostly eat our best asados at home, coked by ourselves, and not in some fancy restaurants. As you very cleverly said, there are many "tourist traps" in most of the restaurants, they do not offer a very good meat or good asado. We almost never eat asado at a restaurant, we like to coke it ourselves. The safest choices or "go to's" to eat meat in comercial places is the milanesa, the choripan, and maybe the vacio sandwich.

Tenes razón, el mejor asado es el que se hace en casa,por el sabor y el precio, un asado en casa para una familia de 5 cuesta entre 20 y 30 mil pesos, mientras que los restaurantes que son para sacarle plata a los turistas te pueden llegar a sacar 20 mil pesos por menos de un kilo de carne, sin contar nada solo el plato de carne. El único restaurante que haya ido y que se pueda comer bien con menos de 20 mil pesos es la colorada, por 16 mil te dan un plato gigante con carne, provoleta, papas fritas, arroz y etc. Siempre tenes que cocinar en casa o ir a una parrilla

I can attest to this. My father in-law is Argentinian and only likes to prepare his own asado and entrana at home. He also serves chinchulin, molleja and morcilla. I'm lucky enough to visit them quite often and have this served almost all the time. And cold weather doesn't stop him from barbecuing. I live in Canada and he doesn't mind barbecuing even when it's -10C outside. He's very dedicated. hahaha

This made me really happy. Usually when i see tourists filming argentina, they film the more "fancy" places. From tourist traps to expensive, high-end coffee shops and such. But this video was different. This one actually felt like home. It seems you had a really good time in my country, and i'm glad of that. Hope you can visit us again someday!

You´re right. The best places to try authentic local food are in places that are not very popular and where the locals go to eat. It's like in USA, the best hamburgers you can eat are in restaurants not very well known and in the interior of the USA. Please, don't miss the chance to try argentinian delicatessen ,, alfajores, ice cream, crossants, breadcrumb sandwiches and more.

First of all excelent video guys, as an Argentinian I´m proud to hear you talk so good of my country. In order to eat the best asado you have to go to a parrilla de barrio, translating it is neighborhood grill, you have to find the parrilla where the construction workers go to have lunch, the parrilla MUST NOT be fancy and "good looking" because normally those are the turist traps, the place has to be a little run down, and the asador has to be a guy with some extra pounds. In the next trip to our beautil country you have to go to Urribelarea, its a beautiful little town in the outsides of Buenos Aires and it has a ton of parrillas, all of them really good, one of the best in my opinion, and the most funny also for his owner, is La Cueva de Ruco an all you can eat parrilla that is very afordable with a great cuality meat.

The standard asado at home is usually the "tira de asado" (short ribs in arow), vacío, chorizos and may be morcillas (blood saussage). Some people may add some steaks similar to the T-bone steaks. Then you can add "achuras" which are different parts of the cow, as intestines, kidneys and some glands ("mollejas", the most premium part of the cow). In my personal case I like the "colita de cuadril" (rump) which I like very much in slices to make the sandwich. Another nice cut is the matambre, both from cow or pork. I think in English is called flank steak. The asado in Argentina is very simple: the only preparation of the meat is with salt. The trick is in the grill, where the cooking is very slow. The rule is that you must be able to keep the hand one inch over the grill for 10 seconds. The maximum of the asado is the "Asado con cuero" ("with the hide"). The grilling is done for may be 24 hours and the heat is so low that the hair of the hide that the meat still has is not burnt. That meat may be cut with a spoon. Some notes on info in this nice video: -Argentina has only 23 provinces and the Autonomous City of Buenos Aires which is de federal capital. -We don't smoke meat in our traditional grills. The idea of the embers is that they don't make any smoke. .Chorizo is originally made from pork and spices but as they were expensive cow and half and half of cow and pork have arrived to the market. But the best ones are the original. And we call salsicha a thin saussage, while chorizo is thick. There is also de Chorizo Bombón (Bonbon saussage) wich is very short, almost a round chorizo.

We’ve seen from previous asado experiences that a lot of the cuts available in restaurants/at fairs in BA tend to omit the organ meats and blood sausages. Since they’re not our personal favorites we didn’t seek them out, but the girls did sample morcilla (our eldest was a fan!)

@@pearsonescapes I'm here to help. The achuras (organ meats) usually have special preparations before the grilling. In restaurants usually are offerend in a"parrillada" which is a mixture of meat cuts and some organ meats. Unless it's a premium "parrillada" it won't have mollejas which are the highest gourmet organ meat, very delicate.

For some reason you didn't mention chicken? Grilled in butterfly style. The minimum family asado is one meat cut, chicken, and chorizos, if you want to add more morcilla and some intestines, I like the chinchulin (udder), which comes with milk inside keeping it juicy even when the outside is caramelized. Another attractive grill dish is the matambre a la pizza, matambre is a very flat and broad cut which you cook first on one side, then when you turn it you put tomato sauce, pizza seasonings and mozzarella or some similar cheese on the side that's already cooked. A more rural style is a la estaca, which is large cuts grilled on a stand at a distance from an open fire.

@@jonweman6128 The grilled chicken is not bad, but you have to do it very slowly because if not it will be burnt on the outside and raw inside. You can put on it lemon juice. But as it need much more time, is not as common as vacio and asado de tira.

It´s great that you enjoy your stay in our country. I seriouly recomend you to try leaving Buenos Aires and head to the interior of the country. As many countries with a great extension of land, our is very diverse and the expirience I can garantee you that will be something totally new and diferent (besides you left without touching some of the best typical dishes as "locro", "humita" or "cordero" if you must carry on with the meat)

You need to have a local family have you join their Sunday’s asado. That is the real deal. Good wine, empanadas and picada, and the very best meat. The asador gets the best cuts from his butcher friend at the neighborhood carniceria, that’s the way it works. Also try mollejas, chinchulines, morcillas and different fillings chorizos. The best is the cultural part. The asado making and enjoying hanging out with the family.

Exactly! also there are a lot of varieties of quality, not all steak is world class and as you pointed out some places are tourist traps. It's hard to filter as a newcomer but as you experienced, sometimes the most common places have great cooks and meats. My family comes from the interior of the province and there you can find even better, same for other provinces like mendoza (where there are really good wines)@@pearsonescapes

Guys you missed the empanadas salteñas, the complete milanesa sandwich, the milanesa a la napolitana and the ñoquis with estofado. There are many argentinian foods that are amazing. Best try asado not in a fancy restaurant, but in towns outside the city.

Increíble video, ame ver que la pasaban bien, la familia que tienen es muy adorable y ver a las nenas hablar español me llena el alma. Respecto a la conclusión fueron completamente acertados, el asado y choripán son los mas famosos de Argentina por ser top tier en sabor - precio, ambos se comen generalmente con chimichurri y el choripán con picante (Pero depende de cada persona). if you guys have some argentinian friends, I highly recommend a home-made asado, which is in my opinion THE best. It's a whole experience, incredibly social event that argentinians partake on. It's usually started with some mate, beer and a picada (a variety of hams, cheese, salami, and more cut in one-bite cubes). An asado can take pretty long to cook and we make sure the long wait is worth it at the end!.

I don't know if you are still in Argentina but you should try the ice cream! There are many ice cream parlors in Buenos Aires, some more commercial (like Freddo, Volta, Grido) while others are traditional in the neighborhood. If you ask an Argentinian which is the best, they will probably tell you one that is close to their houses. XD I really like "Via Flaminia", it is outside the city of Buenos Aires, in the suburbs. It is one of the first results that appears on Google Maps.

Your thoughts on La Cabrera are indeed one thing that a lot of people need to learn. Buenos Aires is actually unbelievably cheap... if you don't go to the tourist traps in the capital. If you ever do return, I can only recommend trying to get a local to guide you to the better spots. Also, you came with two cute children, this is one of the best things you can do, because as you noticed, people will give your kids free stuff because it's literally the best kind of advertisement. No one's more honest than a little kid when it comes to enjoying something. Also one thing you absolutely need to do and which you need a local friend to help you with is to have a proper "asado", that is to say, the proper experience of just spending a sunday doing nothing but playing card games, drinking beer or your preferred choice of alcoholic drink, children playing ball games in the background and feasting on everything as it comes out. You'll eat more and you'll eat better by pacing yourself along the grill's timings. It's a very different experience and it makes the meat taste much better. Unfortunately, I can't offer my own home, but if you can find someone who'll host you for an asado, do not miss the opportunity to go and feast.

I have to agree with most comments, I'm completly blown away by the Quality of the edits, like, that's some serious skills and experience talking, I love it! As for the content, again like most people say, it's incredibly refreshing to see someone reviewing the country's culture and food with such enthusiasm and also some reasearch as well, glad to see that you enjoyed your stay and food as well. In fact on the research bit, I have been living in the city for over a year, and over 2 decades on the suburbs (Municipality of Lanús, Buenos Aires province to be exact), and I have NEVER stept on Mataderos to see that they offer such a fair, hell, I never went to San Telmo market lol (I do find funny that I could tell the bus that you took just by looking at the words on the glass, my boy the 29 looking strong). I do hope that more tourists see this and take the challenge to go outside the most "trendy" places to find hidden gems. Keep up the amazing work!

La feria de mataderos es un lugar increíble que visito desde que estaba en la panza de mi madre. Es el mejor lugar de todo CABA para degustar los que quieras. Creo que el error que cometiste es que probaste casi todo en sandwich y ferias, lo que técnicamente no es asado. Son muy ricos, pero el asado se come al plato y suele estar compuesto por achuras (choripan, morcilla, chinchulines y puede tener riñón, entraña y molleja), y después la carne suelen ser: asado de tira, vacío y bondiola, aunque puede haber variedades. Ojo de bife y bife de chorizo son más de restaurantes que de asado. Si sos turista y no tenés ningún amigo de acá que te invite a un tradicional asado, lo más parecido que podés comer es si vas a un "bodegón"

Loved the video. I live here and of course have a few comments. I would say costilla (beef ribs) is the most common cut, the star of the show. Also an asador is the iron spid used to stretch out and cook the meat in front of the fire. The guy cooking is called parrillero 😊

El vacío al Asador cocinado por unas 3hs como mínimo es un manjar de los dioses. Después el asado de tira del medio al Asador sigue como otra comida de dioses. Lo que pasa es que cambia mucho los sabores y texturas si se cocinan al Asador o a la parrilla. Saludos!!!.

Hi, nice video let me tell the cuts can´t be missing in an Argentinian ASADO(BBQ): 1) ASADO as u can see it match de BBQ name itself if there is no Asado, the u are not doing an ASADO xD . If we need to coose only one cut of meat for a BBQ, 60% chance it will be Asado(almost sure if we will eat from a plate), 30% Chorizos for choripan, and 10% Vacio for vaciopan(there are chosen for convenience/economy). We cut the RIBs in 3 forms fist and main "Asado de tira" we use an endless saw to cut all ribs in a row to about 2 inches thick and them look like a long chain of ribs joined by meat. Second "Asado banderita" also named "Asado minutero", it's the same but 1/2 inch thick mostly chosen to cook on a hurry is the king for construction worker in the "Asado de obra"(Building BBQ) and Mechanics, so the cook and eat fast en keep working, also is chosen when "NO HAY PLATA" cause being thinner u can buy less quantity and still have a long piece. Third for event BBQs, at least friends and family sunday we chose an entire "Costillar"(Ribs rack), is the better way to eat Asado but is expensive, it can be cook "A la parrilla"(On the grill) but is better "Al asador"(fixed to a stake next to a bonfire). 2) "Chorizo", with Asado and Chorizo we have an acceptable Asado. 3) "Vacio" is the flank(NOT FLANK-STEAK it is the "Matambre"), then we have a good Asado. 4) "Chinchulín". The MUST of "Achuras"(viscera), is the small intestine, we keep the chyme(in others countries they wash it from inside) and mesentery(mostly cuted out in other places) as they are really tasty. We cut it in chunks that rolls in a circle by themselves, we call them "Orejitas"(little ears). Alternatively we make "Chinchulín trenzado" cutting out mesentery and washing chyme from inside and knit it like crochet making it look like a braid. 5) Morcilla(blood sausage). Based on cow blood and pork fat(tocino), we have normal(mostly eaten) one that is salty, and "Morcilla Vasca" that is bittersweet having green onion, walnuts and raisins. 6) "Entraña" nowadays it's becoming a little luxury cut. If we can afford it will be there. 7) "Riñón" a controversial "Achura" loved or hated. Being the kidney it can taste to urine if not correctly washed so many people had bad experiences and hate them. With this we have an "Asado completo"(complete BBQ), we can add Chicken here but only for beef disliker commensal or if we need to go really cheap, for real chicken is an outsider on the Asado. Luxury: If we can really afford this ones are also MUSTs 8) "Mollejas" the QUEEN of "Achuras", considered by many people the BEST part of the ENTIRE COW are now very expensive. They are glands, we have "Mollejas de corazón" having more fat is the chosen for the grill and "mollejas de cuello" chosen for frying pan dishes with some sauce. 9) "Bife de chorizo" the Argentinian steak for EXCELLENCE, strip loin cut AT LEAST 2 inches but can be a half more, bone out and a keep ALL HIS FAT do not trimmed, if all this condition are not met this is NOT "Bife de chorizo".As the entire steak train are mainly exported is very expensive for Argentinians. This is the only cut we eta under medium rare as is naturally tender. For people that like it Well done(mostly women afraid of juices being "blood" but that loves "Morcilla" xD) it can be cut "Mariposa"(Butterfly) Welcome outsides: These are not main part of an Asado but are frequently part of them. 10) "Provoleta" braided provolone cheese cooked on the grill. Difficult to find a good "parrillero", that cook them right so you get crespy and smoked crust and melted interior. But if it is done right is the better cheese u can get PERIOD. 11) "Matambre a la pizza" meaning "Hunger killer" is the Flank-Steak a thin cut between ribs and skin with Pizza toppings. Delicias and very frequent in Asados when we can afford. Inexpensive as it need a lot of work to cook it. But expensive when you count the toppings, specially the Mozzarella cheese in Argentinian amounts. 12) "Pechito de cerdo" pork brisket, as "Chorizo" is the only MUST pork in the asado, this is a welcome and frequent addition. 13) "Bondiola" the Pork shoulder, another pork cut wellcome in an asado, very frequent for sandwiches. Foreigners: You can spot them on an asado, but for sure they are foreign acquired culture. 14) "Ojo de bife" the Rib-eye Steak, it's NOT a classic on Asados("Bife de chorizo" is), usually we cut if thin with bone in as "Bife ancho" for flatiron cook. 15) "Picaña" o "churrasco de Tapa de cuadril" the famous Brazilian Picaña, is the rump cap. historically we roasted the entire rump in the oven, but nowadays Brazilian culture had spreaded and you can find Picaña in "fancy" Asados. 16) "Porterhouse" USAs BBQ adopted is not frequent in Asados but is appreciated for being massive and bone in. Traditionally we cut it thinner as "Bife con lomo"(T-Bone) for the flatiron. Other meats: We traditionally eat some other roasted/barbecued meats that are NOT part of the Asado. being the most frequent "Pollo asado"(Grilled chicken popular for being cheap), "Lechón"(little pork), "Cordero"(little sheep), "Corderito patagónico"(a kind of DOP) and "Chivito"(little goat). We never cook "Lomo" on the grill as its not tasty and being lean it ends up dry and tough, mostly used for frying pan dishes especially as "Lomo a la pimienta" or "Lomo Demi-glace" About your experiences: 1) "Entraña" is hard to bite, nothing to do on a sandwich, you need to cut it first on 1 inch stripes with the grain and then on bite chunks AGAINST the grain, doing so it will feel tender, and it is OUTSTANDING tasty if it have a good and FAST sear. If need to look almost burnt but with almost raw inside. 2) "Bife de chorizo" is cut from same spot tha New York, but it is cut thicker and keep all the fat without treem. U feel it tough cause the best quality is exported and in Argentina the meat is sold "fresca"(fresh) so it is still on "rigor mortis" you need to age it to eat rare, i will recommend you medium or medium well at least u know its correctly aged. 3) "Ojo e bife" is great but not a real Argentinian tradition. 4) "Vaciopan" is great with vacio well done. But "vacio" is EVEN BETTER medium rare on a plate. 5) "Asado" is better medium on a plate.Asado sandwich in nothing to do with tradition. Offcorse, a good meat and veggies does a good sandwich but is not a tradition. I hope u can try "Asado de tira" y "asado al asador" on a plate with "Papas rejilla a la provenzal" and "Ensalada mixta". 6) "Lomo" is almost not eat on Argentina, it haven't taste and we see it as an overpriced cut. I you cook it right any meat will end up tender and any of them will beat "Lomo" taste. 7) For sure "Choripan" is one of the best sandwich on Argentina and that's why it's a tradition, "Morcipan", "Sándwich de Vacío" y "Sándwich de Bondiola" are just as good and almost as traditional(in that order. 8) The Asado is the N1 for a reason. Do you need to take in account that we the Argentinians are used to Exports leftover. So we mastered the cooking of cuts that are not wanted outside cause they "are" tough. 9) In the other hand we are NOT USED to cook(or age) fine cuts other than "bife de chorizo". The fat in the "Bife de chorizo" is a tradition its texture and taste are INCREDIBLE(if not u got bad quality meat, basically feedloot), you need to eat a little fat on every bite. 10) If you still in Argentina, you need to go to "Parrilla El Tano" in Avellaneda" is free buffet you can try all traditional Asado done right. @@pearsonescapes I, as a father of two boys, and grandfather of a 10-year-old granddaughter... I always took special care in her diet, both in nutrition and in food "culture"... taking care of the variety and quality... and in the case of meat, especially, children under 6 years of age should be especially careful not to give them undercooked meat to prevent emolitic huremic syndrome, which can leave serious consequences on their kidneys, in the best of cases. A big hug.
