Honestly the aquarium's he's keeping them in are small for crayfish, they're designed for shrimp. They also like to burrow and hide. In my opinion I think this is more a stress related death than it is from eating substrate. Not enough space, no where to hide, Zach attempting to breed them, all contribute to the stress and death of the animal. I really used to enjoy watching your vids Zach, but lately not so much...

Never touch a crayfish if you think it might be moting, It can stress it out in the point that it Dies. If you think a crayfish might be moulting, depending on its size give it a few days and if it still isn't moving then you can remove it. But otherwise leave it in there because you will stress it out moving and handling it. I also notice you only gave it to pellets which is below what you should be giving it crayfish's love to scavenge and eat about anything, but you need to give them at least a bit more food than that. they also need hiding places or they will get stressed out, and I notice you had none. They may be used to you, but that doesn't mean that they do not want to hide.
