My Aunt and Uncle ran a concession at our State Fair of Texas back in the 1960's. I witness how much work was involved in our they worked day and night for 2 weeks (in the 1960's)the fair ran. I can only imagine how challenging a Fish and Chips shop might be for anyone thinking about this business.

the fish shops in my area serve vile chips yet they still do well, the only chips I like are my homemade chunky chips, cooked to perfection if I'm going to indulge in chips I want them to taste great.

What do i have to do to open a fish food company or business.I want to be able to cook and sell fish but i need tips ? What are some cook books and dvd's or movies to get for that ? And what are some things i need to get for a start for that and before i go to school for culinary ?
