For a while, back in 2018, Apple were still signing iOS 6 (the may still be, I don't know), so I downgraded my iPad 2 and iPhone 4S to iOS 6 for retro kicks. I still love the skeuomorphic design! Edit: Just looked - it looks like they stopped in 2019.

Random (and possibly dumb) question: I was going to sign out of my Apple ID on my old phone since I got a new one and I’m signed into that one... It then asks me “keep a copy of your data on this phone” (calendars, contacts, reminders, safari)...should I have those 4 things switched on or nah?

Depends. I keep everything synched via iCloud, so there's nothing on my iPhone that isn't in the cloud and on my other Apple devices. Whenever I sign out, whether to do a factory refresh and clean setup, or to lend or give a device to someone, I always erase everything. So yes, if you've got it all on iCloud, then erase away. Otherwise, if you're keeping the device, you may as well keep it for posterity.
