So, a blanket stitch just has the thread twisting around each other once, and the buttonhole has an actual knot at the edge.

what is a pivoting stitch in hand sewing?

To be honest, I have not heard of a hand stitch called a pivoting stitch. You do pivot the buttonhole stitches around the ends of a buttonhole, but that's really just the angle that you place each individual stitch as you go around to the other side. Do you have an example of what you are thinking about? I may know it by a different name

I'm so glad that it helped! There is so much conflicting info out there and it makes it difficult, but having that little extra twist really does make a difference in your buttonholes!
