What's the difference between cooled & uncooled thermal detectors?

I used to be a thermographer for electrical inspections. we used a much older flir cryogenic cooled camera (wish I could recall the model) that I think was from around the year 2000 or earlier. it took about 5-10min to cool down before using. i also had to line up 1:1 photos with a digital camera for comparison. it as a lot of fun!
