Hi Gabby in a sentence like "This is a bird." The best way to change it into plural is to use "These" of course :These are birds. But Can we use "They" They are birds. Is it okay or not?

i think "on time" - period of time, like work schedule, успеть к отрезку времени (к рабочему дню), "in time" - moment of time, like train departure, успеть к точному моменту (к отправлению поезда).

In- The student turned his paper in in time. On- The the student turned his paper in on time. In time means that you're almost going to miss out, and on time is scheduled, like you said, without worry or stress.
