what's the point of SALT in making Ice Cream

First time I watched the video, I couldn't grasp the concept of "energy" in the whiteboard diagram at all. But then while rewatching, I substituted the word "energy" for "heat" everywhere you said it and it immediately clicked and made it extremely easy to understand. I guess it's because that was the term we used in my thermodynamics class back when I was in uni.

ya, great! I rolled over using heat, but one of the major themes of the class I teach is energy so in class we talk about what that generality “energy” can be referring to to get some discussion going! I’m glad you enjoyed. There are a few things in that explanation that need a little testing for more verification, but it is a nice starting block, I think!

So it’s the water that gets to -8 does the ice stay warmer? I am having a hard time understanding the total energy. It seems like energy has to be leaving the system to get a lower temp overall. Like, 0c ice and 18c salt have the energy they have and we express that as temp. I get that it the energy flows from high to low, it just seems like the salt somehow makes a a lower low that existed before, but where did that energy go, the net energy is the same as it was when you combined everything right? So if something got colder, doesn’t something else need to get hotter?

Great thoughts! Here is what I would want to do to get to look at that some more...Measure the temperature of the ice. Would be really surprised (but kind of excited) if the temperature of the water dropped much below the starting temperature of the ice. I'm thinking the ice initial temp represents about the minimum temp we can get to. We might be able to get a hair lower than the ice temp because adding salt to water will cool the water as energy is required to break up the salt crystal, but I found that the temp drops because of that by about a degree or so (I did a video that is probably a little too long on the topic but if it interested you you can check it out.) So the initial temp of the water and the energy associated dump into the ice (cooling the water, melting the ice), and normally the water will stop at 0C since because it freezes below, but in this case it will keep dumping energy in to the ice (continuing to cool the water and melt the ice) because the salt is blocking the refreezing process. There are a couple follow up experiments I am looking forward to doing to get a some more data, but those are my thoughts currently. Does that help or did I dodge your question?

I am glad you enjoyed it! Currently I am on a little binge of doing some videos that don't give the full explanation outright, but I really enjoy trying to a create an explanation that is a little satisfying. I will make one with an explanation though pretty soon on the whoosh bottle. It is one of my pet favs and I have done a few dozen experiments that have helped me get a better grasp on what is going on.

What kind of salt did you use Is it table salt . kosher salt or rock salt

I almost always use NaCl of some kind. I can't remember which I used for this. I have used kosher, rock salt, solar salt, most of them are just different shapes of crystals for the NaCl. Solar salt is the least expensive for a large batch!

What refreezing process? Ive never seen water, from melting ice, refreeze. If the water was refreezing it wouldnt have melted in the first place.
