We live in sad times, Heather. Makes me want to scream to the skies some days (and, between you and I, some days I do-good thing I live in the mountains). Bad when a simple word can get you shunned. People just make me shake my head some days, dragging their feet about making a garden. We have been so spoiled in our country with the richness of our food supply, but when that dries up, we all still have to eat. I have not had a fast food meal in a year, never did much of that anyway, and of course, we are better for it. Self sufficiency is the enemy of overreaching government so that big ugly animal does not want us to do that. We all MUST try to be as self sufficient as possible and take care of business ourselves. You reminded me that I need to put my canning salt in jars, too! Mine is in the box in a big ziplock bag in plastic totes/buckets. Just like with chicken keeping, get the basics down and do it right and you'll feel very satisfied and rewarded and reap the benefits from it. Going rogue can give you some very bad results! Given that I live in an apartment a large garden is out of the question. I do have a small container garden which mostly gets eaten fresh LOL. I just watch the farmers market, roadside stands and good sales for what I can. Last year I found sweet corn 20 ears for $1. You bet I bought a ton of it and canned it. Last week I found green beans at a ridiculously low price. Yeah those got canned. Something else folks need to remember is that being a canner does not necessarily mean you are a doomsday prepper. Life happens and not everything in life is predictable. The hubby and I never expected when I started canning in 2017 that in 2020 we would have to survive 2 hurricanes, a lockdown and getting COVID in 2020. My pantry saved our butts on all 4 occasions when we couldn't get out for sometimes weeks at a time this past year. As for canning simple things. There is a huge advantage to it that you didn't mention. If you can the ingredients rather than finished dishes you have greater flexibility is how you use what is in your pantry. Those ingredients can combine into a huge variety of dishes where a jar of beef stew can only become a few things.

During World War 2, people planted Victory Gardens, food was rationed back then. Yes, they canned their food. I ordered Ball Silver Canning Lids, also the Ball combo packs of Silver Lids and Rings. I received them yesterday. I've never canned meat before, my freezer is going to be cleaned out. Actually I've never canned in the winter. Have plenty of jars, now the lids I needed. You and other homesteaders have encouraged me at 79 to try something new. We never get to old to learn. Keep up the good work, don't let these people get you down. I’ve always been afraid to make bread except in a bread maker. But I got the kitchen aid mixer I wanted for Christmas and my husband grinds wheat (he makes most of the bread in a bread maker). I am determined that in February I WILL make bread by hand! I mean I’ll use my dough hook but I’ll actually shape and let it rise, all that stuff that has intimidated me all my life. Then I can learn to make various rolls and other things. I overcame my fear of pressure canner in 2020 and now in 2021 I will overcome being intimidated by bread.

When I first got married in the 70's I made 2 loaves of bread every weekend, now I let the bread machine do the work, so much easier. I hope to move this year and have a real kitchen, I will probably go back to fully homemade baking just to prove I still can.

I’m here to tell ya, you could make a fortune doing online live video classes. Or even in-person classes once this craziness is behind us. I learned how to can from a dear friend of mine. I would call her in a panic if I had a jar that didn’t pop lol. I agree about keeping it simple. Can ingredients. Use ingredients to make meals. Then you have lots of options! Canning “recipes” is too complicated. Can’t wait for the bread series!!

Lol your channel and you helped me so much when I first started canning! Your an amazing teacher as you show us how to correctly can safely.. I believe in all the extra steps of washing /sterilization before preserving our food..Let’s face it this is preserving our food for long term! I got a bunch of books on canning especially the ball ones and yes I love love The Amish Canning Cookbook by Georgia Varozza! But after I watched a lot of videos and did all the reading and researching in different canning books , I then got the supplies and equipment that I needed and started out simple..my first pressure canning experience was green beans ! I had a blast it was something that made me feel so good and accomplished because as a young girl I was the peeler for tons of apples,peaches, potatoes and such for my Grandmother and can’t forget bean/pea Shelling and corn shucker! Now I didn’t know how to can from her step by step but I did plenty of stirring and had some watching here and there of the process and the prep of the food and seeing the canned food being set out to cool . And when I was canning it brought all those wonderful memories of my Mom ,Aunts, and Grandma and us chatting or sometimes singing our church hymns as we worked. Now I believe every kid should have such a wonderful experience as that ! That’s the richest heritage that I believe anyone could ever have . That’s love and honor and respect and when I go into my kitchen to cook/can something those memories come up in my heart that I was allowed to be included and knowing that I was able to be trusted and had a hand in helping brings a security to a kids heart . So I also have my Grandkids in the kitchen doing things cooking cleaning being responsible and teaching them, with lots of patience..spills will happen.. those precious 3 and 4 years olds and 12 year olds will make a mess so just smile and say that’s ok we can clean that up licky split ! Show love and kindness and they will grow up loving to cook clean and can too! Blessings and love from one canner to another!

I recently began canning with a pressure canner and have discovered a whole new way of cooking, preparing meals and a fantastic FAST FOOD substitute. Plus, I make great gifts for family and friends that are ill or too busy for 'reasons' and appreciate the quick delicious canned food. Glad I'm seeing this now. I have the tools I need but I didn't think of any of the pantry items ill need for say pickles, or the salts. I've got a book on it, but its good to think of it now instead of when I'm trying to prep my kitchen. Thank you for sharing your wisdom. Cucumbers and tomatoes are what I'm focusing on this year. When I get comfortable with the process, I may suggest to my husband we figure out how to can his smoked chili. 💛 Again, thanks!

Well, I'm still subscribed but I did come check just to make sure! I usually watch through Roku so had to drag the laptop out to check and comment. I'm so sorry you have had issues just because of vocabulary - sad state of affairs! Heather, you did a fantastic job with your workshop. Sigh. I really wish there was an Amish store around here, lol. FYI, canning salt is another oddball thing that I've found in Walmart's Clearance zone, big markdown. I agree, canning ingredients by themselves gives us way more flexibility in the kitchen. BUT I will also can some basic soups, because I'm mostly a household of one and that will be more convenient for me. 😊 Between this series and the Canuary series momentum, I am *finally* ready to rock-n-roll on pressure canning. I am way more confident and very excited about the possibilities! Sorry my comments get kinda long, but I can't express how much I appreciate your taking the time to put this "revolution" together. Too bad about the algorithm issues. Computer programs just aren't smart enough to understand context in our challenging times. Anyway, THANK YOU for all you do. 🤗💕

Heather you are such a blessing, you have helped me so much! I'm making bread because there was none on the shelves during our Texas storm. No I'm gathering info on canning. My grandma canned but I was too little to remember all the steps. My mom was a single mom working 2 jobs to feed us 3 kids. So yeah, back to our roots indeed! Thank you! 😊

Your whole series was very informative and helpful for many. I sure wish I had the Amish store near me that you go to, watched a video of you shopping there a while back. I love the Hoosier clear jel, I use it even when I make a home made fresh pie as a thickener, and other fruit pies, much better texture and taste, never use cornstarch or flour any more. The instant is excellent when making a fresh strawberry pie as a thickener. You can also use the instant to make instant pudding mixes, made one once it wasn't to bad. I just watched the video of the woman pressure canning and all most killed herself, this only happened a few years ago, did she not ever hear of the word google, sorry she is not to bright, hope she gave up pressure canning.

Clear jel is a thickener and sure jel is a name brand of fruit pectin. Hope that’s right. Sooo looking forward to bread making! Thanks for all the helpful info! I realized during the Pantry Challenge that if you can’t get to it right now it’s ok to get to it when you can. So I’m going to watch these in depth after it warms up. Due to my finicky cooktop, I do my pressure canning outside. Really looking forward to watching these and gaining more confidence with the pressure canner!
