Mini Omelet Bites:
modified from this recipe: www.wellplated.com/healthy-br...
(I used a mini muffin tin rather than the larger 12 cup , so took only 15 minutes to bake)
Chocolate Chia Seed Pudding:
2 tbsp cacao powder , or cocoa powder
3 tbsp maple syrup
1 tsp vanilla extract
1 cup dairy-free milk
1/4 cup chia seeds
garnish with berries or nuts!
No Bake Energy Bars:
13-14 medium medjool pitted dates (about 1 1/2 cups)
1 cup raw walnuts
1 cup old fashioned rolled oats
1/4 cup peanut butter
1/4 cup flax seed powder (optional to add fiber)
1/4 cup unsweetened coconut flakes
3 tbsp cacao or cocoa powder
1/4 tsp salt
Green Smoothie:
1 frozen banana
1/2 cup frozen mango
1 cup fresh spinach
fresh ginger (size of end of finger)
squeeze of half a lime
coconut water (or just plain water!) to desired consistency
