On day 3 of our family reunion, we had 갈비 로스구이 (Galbi Ros-Gui). The cost effetive way to enjoy this is to get short rib chunks from costco and cut it yourself. You have to cut and cook in a certain way so it's not tough. My sister is a master at this. You have to cut it not too thin but not too thick. Also must cut against the grain of the meat. Then, sprinkle black pepper as you cut (but not salt). You have to sprinkle salt when you grill only one side for the best texture.
Pre-heat your pan really well. Then, sear one side on med-high heat. Sprinkle sea salt lightly. Do not flip it or touch it unitl golden brown. Then flip and cook for only a few seconds and eat. For dipping sauce, just sesame oil, salt and black pepper. Then, make ssamjang (ssamjang recipe on our website) for lettuce wraps. If you have perilla leaves for the wrap, it's a bonus!
