You need to read the orig WAP book. A lot of what people call his ‘diet’ is not what he wrote about. His book was not about a certain ‘diet’ but a our the effect of colonialism on indigenous groups incl nutrition. It was about their traditional and ways of eating and living which was diff for each population.

I grew up eating beef cheeks but tongue wasn't always my favorite. My mother would mix the tongue meat to the cheeks and I never knew the difference.

I recently bought some cow tongue and have been spending the past week trying to build up the courage to throw it into a pot and cook it. I’ve had tacos de lengua in the past and it’s SOOO GOOD! It’s a little like beef but softer texture and tasty (if I don’t think about what it is 🤔😆) Couldn’t eat it whole as she does. I like it thinly sliced from the deli

The things that look like olive are chicken spleens :) They're very beneficial! We raise our chickens, buy a whole or half beef from local farms, grow product, get some produce from local grocery stores (Sprouts, King Soopers) and order some from Azure standard :)

I love meat and veggies but I don't know that I could ever bring myself to eat the organs and pate and beef tongue. Do you NEED to eat the organ meats to do the diet? Can you supplement with the organ meat grass fed capsules instead?

So, tastes change as you eat this way more and more. I used to not be able to stand liver and now I can enjoy it! Capsules are great for when you're first starting, but they are a lot more expensive than just cooking the organ meats :)

I am waiting for the gaps book to be delivered but I am pretty determined to start with stage one gaps diet to rebuild my gut as it is in pretty bad shape. do you think you can make daily recommended caloric intake during first stage? Love what you are doing. I know this goes against some principals of natural eating. The tinniest amount of corn starch slurry would thicken up your ketchup really nicely. Just add it after it reaches 180 deg.

I wish I had the time to cook such nutrient dense foods like yours! I work in retail and it’s very time consuming😞But I do try to incorporate a lot of ferments, kombucha, organic veggies, pastured eggs and meats, and sprouted bread so I’m really trying😔

No, the necessary nutrients aren't found exclusively in plants. Dr. Weston A. Priced tried to find a very healthy traditional vegan culture but such a thing just doesn't exist.

Meat is so expensive where I live, I want to eat it daily but it’s not easy. Especially when you gotta feed more people and then have leftovers for the rest of the day. Im having my baby tomorrow and I don’t know how I’m gonna make money from home and then be able to eat high quality meats.

The best way to begin organ meats is gradually. I make meatballs and meatloaf with them and everyone loves them. I cook them, food process, mix with plenty of ground beef and lots of veggies chopped in food processor as well. Add eggs and seasoning. Veggies include celery. Onions, peppers. Garlic, carrots, and mushrooms. Othrrs could work too like spinach or zucchini. Scoop into balls and bake on parchment paper.

Try it, especially chicken organs - they’re delicious! Way better than people think! I love chicken liver and hearts, gizzards are pretty good too. Give them a chance:)

The chicken hearts and gizzards are just like dark meat chicken, and the beef tongue makes the best taco meat when you shred it :)

A great way to try tongue without having to cook it yourself is in Mexican restaurants. It's Lengua in Spanish, and some authentic places will have it on the menu as a meat option for tacos, burritos, etc. They'll cook it right, and you'll know what it should taste like before you have to actually try preparing it. It doesn't taste much different from other muscle beef cuts, and definitely not as strong as liver or heart in flavor.
