I prefer to eat alcohol rather than drink it, and my chef instinct is telling me to throw this ingredient into a cheese sauce, like a mac & cheese with chip crumble? I think the idea was for Doritos to partner with Taco Bell for a drunk nacho burrito, probably for an event like LA28???

So my friend and I got a bottle of this to make gamer cocktails. One was the Filthy Casual - Mtn Dew and Empirical Doritos. It was weird but not terrible. Like if someone gave me one, I would probably drink the whole thing. Then there was the Platinum Ranked which was Empirical Doritos, Tequila, Lemon, Lime, and Curacao. That was horrifying.

The cumin liqueur you're needing for this Greg is Kummel - a liqueur flavored with caraway seed, cumin, and fennel. While the caraway and fennel are there, the cumin is oppressively strong, at least for my palate. I've used it in conjunction with Nixta before and it's like a Taco Bell in your mouth.

Something to consider: Doritos were originally just corn chips. While nacho cheese and Cool Ranch are more common today, they still make "Doritos" which are plain salted corn chips.

I just had to Google that the plain Doritos don’t have MSG in them because to 9 me Doritos are MSG flavored chips more than they are nacho cheese and cool ranch flavored. And today I learned that the original plain Doritos are just tortilla chips made with yellow corn instead of white corn.

I grew up with the original toasted-corn flavor Doritos and I still love them. Unfortunately, they're no longer available in stores in my area...and there's no way I'm gonna pay the exorbitant prices being charged for them on online markets.

The wife used to love that stuff. Since I make mead and wine at home I decided to try something. Made a batch of kilju then put it into secondary with cocoa nibs. Came out pretty good, so I kept experimenting. Currently add some raisins in primary, use a mix of cocoa nibs and crio bru in secondary then finish with a vanilla bean, mint leaves, and some spices. If you like dark chocolate and mint, it is pretty good.

Tasting History with Max Miller just uploaded a new episode as well today, Beef Tea from a Victorian Hospital, in that episode he mentioned some “cocktails” ( non alcoholic) that might fit in your what were they thinking or cursed cocktail videos. One was Beef Tea from The Ideal Bartender by Tom Bullock. The next two were concocted by someone at Campbell’s “ Soup on the Rocks” and the “Frisky Sour” 😅 so Cheers, to a future episode.

I remember touring empirical when I was on a study abroad in Denmark, really cool place. We got to smell it about 2 years before they released this, and I knew I had to pick it up. Glad I get some good recipes for it. I will say, when we smelled it, it smelled much more like doritos than the final release.

You know what? They probably just fermented on actual doritos and then when they filtered it, it lost everything but the corn and the salt. It's why they bothered to include yellow dye #5. It was there from the actual chips.

Empirical makes their spirits through rotovap distillation. Most likely, they blended Doritos with water, or maybe a neutral grain spirit, then put it in their rotovap machines to make a distillate. If they distilled Doritos “water”, they probably cut the distillate with a neutral grain spirit to bring up the ABV.

@@jc5495 According to the Empirical website: they make their own neutral grain spirit from barley and malt, then “the exquisite chips are first crushed by hand and macerated in our spirit base for a few hours, allowing all their beautiful flavors to be extracted. The mix is then distilled a second time to produce a clear spirit.” So, tell me again how I’m wrong

Greg going on abt the lacking sweetness in the Dorito liquor / cocktail really made me hone in on how sweet cheese is & how there aren't any drinks that hone in on that space. There are savory drinks, salty drinks, and dessert drinks; but nothing approaches that natural sweet & salty vibe of cheese. Come to think of it, I haven't ever seen a "cheesy" bottle ad before. Huge untapped market, prepare to see me make a mac & cheese liqueur and then die from overconsumption of said bev.

I could almost see this working in some sort of elote street corn thing. Doritos liqueur, ancho Reyes, the corn liqueur, a dash of mezcal for some smoke, and maybe a homemade cumin syrup? Top with a light Mexican beer and garnish with a dash of smoked paprika. Utterly ridiculous? Yes, but so is the product itself lol.

regarding the dorito-rita: you don't have cumin extract or doritos, but you could rim the glass with a salt+cumin+msg mix to mimic the dorito powder

I think the “sweetness” you’re missing in these cocktails is Umami! Doritos are coated in MSG. Might have been good with a dash of Accent (American brand of MSG) Solution as well as Saline!

Another spirit that can really kick a cocktail up a notch with a barspoon, but take over if you're not careful is Rum Fire. I made a mai tai with a quarter ounce once, and it was distracting, but a barspoon made it absolutely sing.

I quite like Absinthe and I drink it both traditionally and in cocktails, and you're totally right! The closest thing I can think of to a cocktail with it as a base spirit is the Death in the Afternoon, which was better than I thought it'd be. Perhaps there should be more!

Sugar content of a bag of Doritos: 1 gram. I think most of whatever sweetness is in a Dorito is the carbohydrates in the chip hydrolysing into glucose in your mouth.

Feeling pretty proud of my instincts - my first thought before you started pulling out bottles was “Maybe something with Nixta and Ancho Reyes?” Mostly because a while ago I was playing around and ended up with a decent drink from Nixta, Ancho Reyes, and bourbon. (And maybe other things - I was silly and didn’t write it down. No unflavored Dorito juice though, which doesn’t seem to have been a big loss.)

Would love to see an episode on Benedictine. So few people know what it is… love a breakdown of the flavors in it maybe the history of it or how it’s made and some fun drinks that you can make with it. I think it would be really interesting and informative for a lot of people, including myself. I don’t drink very much but Benedictine and/or B&B are something I do enjoy.

A Necromancer is a great cocktail that uses absinthe as it's base spirit. It's riff on a Corpse Reviver #2 (one of my all time faves). This would be a very stupid ideal, but you should do an everclear episode. Uses, cocktails, internet recipes...whatever floats your boat.

@Sunder2113 it would mostly be for the laughs honestly. I think everclear would probably just end up making any normal cocktails very strong. The terrible everclear punch/mix concoctions definitely would just be for the laughs. An episode on using everclear to make your own infusions definitely has potential though.

MSG is actually a HUGE flavor component of Doritos. Making a saline solution with MSG instead of regular salt could probably be used to bring the flavor a little closer to Doritos.

I have indeed used, Islay whiskey, Mezcal and Overproof Rum as a modifyer. Mostly on top of a similar spirit. Like for example as a 50/50 split base an Islay Whiskey would almost mask out a Bourbon entirely. Same with Mezcal in a Tequila base cocktail. But adding a simple bar spoon, adds all of the smoke while maintaining the nuances of the base spirit 🙌

I would love to see Absinthe be the base spirit in an episode. With you doing the arguably “bad” spirits I think absinthe fits right in because like Jaegar most people don’t like it. I’m personally a huge fan of it and would love to see more ways in which I can use it.

So in order to make a drink I thought worked I infused it with dried cayenne peppers, garlic, and black peppercorns and a pinch of salt for a week. Then added back doritos liquor until the infusion wasn't over powered. The drink I made that I thought still had doritos in it but wasn't gross was 2oz infusion mix 1oz lemon juice 1/2oz simple (to taste) 1oz apricot orchards eau de vie I would love to hear your thoughts on it/an evolution on my infusion.
