My two favourite flavours are raspberry and lemon. They look awesome and my wife loves coconut more than chocolate. Your video got me thinking... I wonder if it is possible to use a melon baller to carve out a half moon in the bottom of the cookie to then add more raspberry? I might have to experiment... Thanks for a beauitful (and new to me) recipe.

I can’t stand desssicated coconut, I think it’s would work well with grated white chocolate instead
