Thank you for watching! Yes, the wine needs to be protected with sulphites. I use about 30 ppm at crush to stun wild yeast and other micro organisms so that my strain of cultured yeast will be able to become the dominant strain. Later on after the malolactic fermentation I will about 60 ppm of sulphite, more will be added after the wine has been in barrels and I will consider if I need to add a bit more before bottling. My press is a number 40. It is exactly double the #30 I used to use and is enough to press one of my batches of red in one pressing. I aim to get about 120 L from one pressing of red must, that’s about 32 US gallons. Seven pails of fifty lbs of crushed grapes gives me the 120 L I am looking for give or take a little depending on the variety. If you are pressing freshly crushed white grapes you will get about half that yield from one full pressing. Klaus

I get my grapes from Watson’s vineyards. Kevin and his son farm about 100 acres of grapes in the Niagara river area. You can find them at www.watsons.ca/. We just pressed out his Merlot yesterday, it looks wonderful! You kind of need to think about next year as most varieties are sold out for this year. Joseph Cilone Thank you for watching and the kind words! The wine making cycle is about to start over again, I expect my first shipment of grapes next weekend! Part two will be about malolactic fermentation, sulphites , cold stabilizing, barrel ageing and finally bottling. Sometimes we are so busy doing the work we can’t face filming at the same time😟 but this year I am determined to get part two done! It will take a while as each step has to happen at the right time. You can add 0.9g per L of potassium bicarbonate to lower the acid by 1g per L which as a rule of thumb raises the PH by about 0.1 , you can also put the wine in a cold environment a little below freezing for a couple of weeks. This will cold stabilize the wine lowering the tartaric acid. The other thing I do is put red wines through malolactic fermentation to reduce the malic acid in wine, the malolactic bacteria need the PH to be around 3.2 before they can start to work. Also fruity white wines can have some sugar added before bottling to help balance the acid. If you add sugar you should also add some potassium sorbate to prevent renewed fermentation! Never add the potassium sorbate to a wine that has gone through malolactic fermentation though or you will get an off odour. I hope this helps. Klaus

I used to make wine then got out of it, I was planning on trying again this year with our home grown grapes but the raccoons got into fruit we had stored when I left the shed open one night, maybe next year. That is some setup you have there, you certainly don't do things in halves do you? I'm bookmarking this one for reference. If you are going with the wild yeast on the grape skins what you are saying makes complete sense! In my case I like to go with a cultured yeast that I know will do a reliable job on the varietal I’m making. I stun the wild yeast with 30 PPM of sulphites and then add my own yeast. Take care Klaus
