Goku's fight with Cell is a pretty underrated fight. Even though Goku stated before the fight that he most likely couldn't defeat Cell, this was still a great fight and important overall. In the anime, Piccolo speculated that Goku fought Cell to show Gohan how Cell fought. This fight also showcased that while Goku wasn't a match for Cell in terms of power, he matched Cell in terms of fighting skills.

Funny thing is, it's also a plot hole. In the original Japanese dialog, Cell says blowing himself up didn't destroy him because he has a special Cell in his brain that has to be destroyed to permanently kill him. But... Goku blew his head off! That should have killed him. The dub fixed that, changed Cell's line to say he can regen from ANY Cell so he has to be atomized to die, so Instant Kamehameha failing is slightly less disrespectful.
