Sweet potato leaves are delicious. In Malaysia, we fry sweet potato leaves with Sambal Belacan (サンバル・ベラカン) , a kind of Chilli Shrimp Paste or with Fermented bean curd (発酵豆腐) or simple fried with cloves of garlic. The leaves has a smooth texture. Japanese sweet potatoes are non- fibrous and sweet. Will try to grow them here. Thank you for the video.
Hello, I have enjoyed your work here in Brazil. Here, in some regions, including the one where I live, we usually eat the leaves of the sweet potato. It is very nutritious and tasty. A big hug and I wish you luck and prosperity.

Actually not entire Japan is like this. He lives in the central part of Japan. It gets freezing near 0c temperatures in winter but in southern Japan it never gets cold. That’s why most citrus fruits and sweet potatoes are produced in southern Japan, it’s warm all year around. You know Japan is not that small right? It’s twice as big as UK actually, and twice the population of that as well. Not entire Japan is like this. Then regular potatoes which you would struggle to grow as it likes cold temperatures they’re produced mostly in northern Japan.

Very odd method of growing this! In my part of the world, we cut the "eyes" of the potato when the sprouting is tiny. We leave a piece of potato to each eye, then plant them separately. There's no need to do anything else but watch the dozen of plants emerge. 😊
Or you can boil it with a little bit of salt. Then mashed it, adding butter and flour. Then you shape it like you do but put in half teaspoon of sugar as filling. Then fry it in low heat until brown. The sugar inside will melt. Eat it hot or cold. A traditional kuih from Malaysia called Cek Mek Molek. Very delicious!
In my country,we just plant the sprouted sweet potatoes and let them be..no care needed..water them sometimes and let them grow till they are yellow or old enough. Then harvest them, you'll see a bunch of potatoes..the leaves are tasty.. that's used as a vegetable in my country..
