Not a whole movie but "World Record" from The Animatrix is one of my favorite runs. Running makes him aware of the matrix and he almost out ran it and broke free to wake up.

At The Speed Of Force, Zack Snyder's Justice League. Love it or hate it, this scene has many core cinematic elements that was mentioned in the essay. I'd argue it's one of the most emotionally impactful moments in the film. Honorable Mentions- The Protagonist, Tenet. John David Washington has a great charismatic physical presence. Even in his lesser known Netflix film 'Beckett', it's always a pleasure seeing him on the run.

I picked a Clint Eastwood picture for my choice. I choose The Enforcer (76') chase. Harry Callahan chasing the perp through the streets with his partner Kate (Tyne Daly) trying to keep up. Besides it has one of the grooviest mid seventies soundtracks playing over the chase.

I’d add one of the most beautiful runs: the one Harry does at the end of When Harry Met Sally. Harry was running during some scenes in the movie with no point (representing his previous pointless relationships) but is at the end in New Year where he finally runs for a great purpose: to start a new “rest of his life” with Sally

I know a few examples of running in movies: Action: in Ip Man 4, Yonah Wan runs from her school bullies after she was selected as leader in cheerleading Horror: in Nope, OJ runs away from Jean Jacket when he tries to get his horse back

Alejandro G. Iñárritu really gave DiCaprio a good workout on The Revenant. I think it's exciting how cumbersome and painful it looks. The video for Massive Attack's Angel is a great example of running as a narrative theme for a short.

John David Washington, the protagonist, Tenet. Maybe the only runner as good or better than Cruise that I've seen. The guy just has such an intense, powerful look. Like you can really tell he's just going all out. The fight scenes are pretty good too

Since you didn’t speak much of animals running or animation, I will give an example that combines both. Watership Down’s main characters run away from threats almost the entire film. Farmers with guns, dogs, other rabbits. Even the prologue is about how rabbits run. They run their bushy tails off.

You kind of touched on this, but I think there's something so "human" about running. It's not just a stunt that the actors can do but most of us. Not all have thrown a punch or shot a gun, but most have run at some point and felt the intensity/urgency for themselves.
