It actually doesn't effect Terry, provided they have a Kitchen Manager. The KM is responsible for kitchen labour which is required until close. Floor manager can cut down to one server who's pay is based off tips (little cost to floor labour). When customers stay late it costs back of house significantly more than front of house. Better to have the target on KM's back.

@OriginalElysian usually the GM is above the Executive Chef. The Executive Chef is the back of house manager and most restaurants already have a front of house manager and bar manager, with all three directly under the general manager The executive chef is usually above the other area managers and it shows because he’s almost always on a salary while the front of house manager is almost always paid by the hour while it’s 50/50 on if the bar manager is hourly or salary

As someone who works in a kitchen, that idea is the most sensible and stress free idea. Cooks and servers wouldn't feel rushed to do their jobs and servers can get their duties done as well without worrying about people coming in.

@@Dolliv5Yes, if you come in at 9, you have to leave at 10. You don't close at 9, you close at 10. Last seating is at 9. If you close at 9, then everyone should be out at 9. Anyone walking in at 2058 needs to leave by 2100.

@@Dolliv5 I think 10 would be the soft cutoff, not a hard shutdown. Tables that were seated at 9 might be finishing up their food/dessert/drinks at 10, and if they weren't complete cretins to the servers I don't think they'd be rushed or pressured until it got to like 20 past. The kitchen can have its own cutoff time too so maybe they'd only deal with desserts past 9:40 or so. This isn't rocket science lol, more like goose herding.

Not me! I got sick of that shit and decided if I got my own kitchen, which I did in 2021, that I wouldn't do the crap I hated seeing from my bosses. I had a list, and one of those things is not listening to good ideas because their ego gets in the way or "this is just how we do things". Nuh uh, not in my kitchen. When someone finds a better way to do things I listen to them and then I teach it to the rest of the staff and give them full credit, all the praise, and this can and has contributed to raises. Managers get so fucking stuck in their own ego that they don't fully utilize their team. As far as I'm concerned it's not my job to be the best at everything, it's my job to make my team as good as we can be and that means LISTENING.

Where I live it is very common for restaurants to have a "kitchen open until X" rule in addition to the opening hours. You can still come in, but only for drinks. (One of my favourite places will sometimes hand out whatever is left from service to the late guests as a snack, but there's no guarantee and you can't choose from the menu.)

My state requires you have 5 entree options if you are serving booze and you're primary function isn't a bar. It can put our liquor license in jeopardy & huge fines if non-compliant.

Most restaurants in my area do that too. But also in my area there's kindof this unspoken rule that closing time is 45 minutes before whatever they have on the sign. Minnesotan culture I guess

@@sorryitsmoops I think we disagree on the purity of the initial terms. If things become a problem for enough workers, i believe they should be able to bring it up and say "we dont like these conditions, or we'd like a solution to this issue." You asked why the boss should, and i didnt answer that question. Why should he? Because he wants workers that work. He wants workers that are competent in his environment, trained in his menu, knowledgeable in the environment and culture, so on. These are things that come *mostly* just with experience working there. Losing a large chunk of staff by just being bullheaded or even losing that staff's willingness to work at their best is bad for his business.

My families go to Restaurant did something similiar. Kitchen closed 9pm, Floor closes at 10pm. If you haven't finished your meal by 10pm (with a bit of lenience of course) you are offered to take the rest to go but you do have to leave the restaurant. I grew up thinking this was standard and was quite shocked when I learned that it isn't.

that just seems courteous to me… here in the usa many restaurant goers expect to get whatever they want whenever they want. they see fine dining on tv and think that it’s real life… one place i worked at it was common for guests to still be at their tables over an hour past closed… i don’t understand how just bc it’s a restaurant that ppl think it’s ok to ignore the closing time?????

"Sorry, kitchen is closed" is common to hear in Europe and Australia, and websites generally don't say when, you have to ask. Desert is still available for another hour or so, and drinks until the very end. Keeping all the staff back for one table doesn't seem to make any sense.

Nothing shouts entitled AH as this kind of behavior. Sitting around eating when no other patrons are there knowing the staff must wait on them. Usually either avoid eye contact or look at you smugly and take even longer.

I've been in food service for 35 yrs. This guy absolutely nails it in every video!!! It's funny,it's entertaining, but it's also true!!! He obviously knows what we all go through,cuz he's been there . Keep doing what your doing,it's like therapy for us in the trenches. Thank you Drew.

I think that’s actually a good idea. Last seating at 9pm and so servers and customers alike have a have a realistic expectation of when service is done or almost done

@@jsilva7005Except keeping staff on for an extra hour for one last check is a losing proposition when it comes to labor costs. I agree it’s not a “new” idea but it is one that should have been implemented a long time ago. I waited tables for over half a decade. There is no massive rush 5 mins before closing. It’s 1-2 checks at most.

@@spcfl1461 moops club penguin is obviously mad bc they do this and probably thought it was fine to do, and is now shocked and hurt that others perceive this sort of behavior as entitled and rude. @moopsy just because someone chooses a job doesn’t mean you can treat them disrespectfully… yes, even if you are paying them. business is built on mutual respect, not a lack of it. going into a business near close knowing that you will be keeping EVERYONE at the restaurant there for much longer than they would have stayed if you hadn’t come, is simply classless. no amount of your snobby whining on youtube will change that.

I had that BS happen and they just sat there till 2 in the morning and the managers said no one could leave till they left so most of the servers and bussers laid down anywhere they could our of site and just went to bed Edit: we closed at 10

As both a customer and a server, "closes at 10" has always meant "you must be out of the building by 10." Doors are locking, employees are doing the last bits of cleaning and going home. The mentality of "well if we get there before 10, then they will have to continue to serve us past 10" makes absolutely no sense to me. Closed means CLOSED. Any extension of time or differences in the kitchen being closed vs. the bar being closed, etc. should all be communicated of course, but the word "CLOSED" is not that hard to understand people!

Oof, this reminds me of when I used to work at a restaurant- one time we got an order literally 1 minute before closing time! It was so frustrating and we had already done most of our closing tasks because it had been a very quiet night. We ended up basically having to close twice and finished super late that night.
