I always wondered how Speedrunner like you play through a game like this, when you just unlock a new thing do you look at it and immediatly master it?

Every time I have to practice a new monster, my way of practicing is the same. First I observe the patterns that the monster performs. Then I try to apply movements and try to get openings that I have seen. And finally I practice for as long as it takes to master the match up. The main thing in Monster Hunter is practice and patience.
